While there are infinite reasons life in our ecovillage is awesome, daily salads are a seriously excellent feature!
Our greens are abundant and plentiful! The types of greens we grow vary based on the seasons; we are currently enjoying a bounty of kale, collards, mustard greens, lettuce, broccoli rabe, turnips, dandelions, and herbs.
Year round, they grow beautifully in our tire raised beds.
We even eat the "weeds" that pop up along the path and throughout the property! Lamb's quarter and henbit are two particularly healthy and prevalent wildcrafted greens we enjoy.

We nurture our greens with fresh air, sunshine, well water, and dank compost. In the winter, we cover them with tarps to keep them warm in a simple greenhouse.
Every single day, we are blessed with as many greens as we care to eat!
Our inhabitants love salad, so we make magnificent masterpieces every day. No two salads are ever exactly alike!
Some days, we make huge salads for sharing.
Other days, we gather yummy ingredients and make wraps. In fact, our @everlove is famous for her mouthgasmic style of "19 things on a leaf covered in sauce".
Greens are a super duper superfood, as the disease-fighting plant compound chlorophyll has almost the exact same structure as blood's hemoglobin. This is how we alchemize light into nutrition!
For your viewing and drooling pleasure, please enjoy this gallery of some of our incredible salads from days past:
We hope you are inspired to eat some plants!

Greens of some kind or another will be some of the easiest crops in anybody's gardens! It's just a question of figuring out which ones work best for our specific conditions. Greens are great!
Sometimes it's nice to have weeds in our gardens, when they are Lambs Quarter and Henbit! And there are so many other great garden weeds to eat, too, lol. I think Lambs Quarter is as good as any greens that I ever grow on purpose. It's my No. 1 favorite wild greens of all! Here's to lots of edible weeds in your garden this summer -- and lots of great garden produce, too!
Agreed!!!! Lambs Quarter is also one of my #1 favs just walking through the property and having a little snack!! Glad we are in good company with thriving greens. Enjoying the delicious nutrition with you @haphazard-hstead.
Thanks!
@gardenofeden that's a lot of veggies!
and those salads look YUMza!
perhaps you guys could make a vegan shepherd's pie and finally join the SCC?
I loooooove Salad!!! So incredibly grateful that every day I get to indulge in a masterful fresh creation that is also high vibe for my body. We, at the GOE, definitely have the down low on greens, and always so grateful to share the yumminess. I'm always also down for "19 things on a leaf covered with sauce." So many varieties of everything! Thanks for this mouthwatering and tempting post.
Looks amazing! I wanna live in an eco village!! ._.
Beautiful photos of wonderful plants! I also eat them, and I'm on the best way to be a vegan (I eat organic dairy and milk yet).
