Today's Sustainable Mexican Feast in the Garden of Eden

It is another amazing day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our full time volunteers today on our wood burning stove rather than on the rocket stoves of our sustainable outdoor kitchen! We stayed nice and toasty, had a fantastic meal, AND heated water for showers for super sustainable efficiency. As usual, there was more than enough food for everyone, and we are happy to share our abundance with you!

Today we made a magnificent Mexican inspired feast! 



We made a giant spread today with many delicious dishes and condiments for customization. We served a beautiful salad, Mexican "lasagna", beef taco meat, lime quinoa, black beans, onions and peppers, shredded cheddar cheese, two kinds of salsa, guacamole, sour cream, green onions, and a stack of corn and flour tortillas for wrapping, dipping, and scooping! 



We made all the dishes over the wood burning stove in our common area. Here we are cooking the peppers and onions, black beans, and chicken filling for the Mexican lasagna while warming up our space AND heating water to take hot showers! We also have a tall stack of bricks on the back of the stove that we use to keep our beds warm in these cold winter nights, because none of the structures of our property use central heating or even electric space heaters.



We prepared a glorious salad on a bed of mixed greens. We topped them with juicy red tomatoes, yellow squash, white onions, black olives, avocado slices, and a sprinkling of cilantro. Some of us chose to use this as a salad, and others used a bit just for garnish of the tacos or burritos we assembled. 



Here's one of our wonderful salad servings with some extra chopped apple on top, along with hemp seeds, kimchi, and a dusting of nutritional yeast. It's dressed with our homemade mystical mango vinegar and a drizzle of olive oil! 



We made a big pot of black beans with lots of tomatoes, onions, peppers, and smokey cumin. We finished the dish with a beautiful sprig of cilantro and a squeeze of lime. 



For one of our main dishes, we made a delicious Mexican "lasagna"! We first cooked a yummy shredded chicken filling with onions, peppers, garlic, tomatoes, and chili powder, then we layered this filling with corn tortillas and monterey jack and cheddar cheeses! Had we cooked in our outdoor kitchen today, we might have lit a fire in our earthen cobb oven to bake this off, but since we do not have an indoor oven, so simply heated this great dish on the wood burning stove until the cheese melted.



We also prepared seasoned ground beef to use for taco filling. This organic, grass fed ground beef has onions, garlic, salt, cumin, and chili powder.



We made a pot of quinoa and added onion, cilantro, and lime juice for lots of flavor, and a sprinkle of chopped tomatoes for color.



We sautéed a pan of onions and bell peppers, classic veggies in Mexican cooking.



We served some delicious sauces on the side! Here we have a spicy red tomato salsa, a mild, tangy green chile salsa, a creamy, garlicky guacamole! 



We offered a dish of shredded cheddar cheese for extra sprinkling.



We chopped some fresh green onions to sprinkle on any dish that needed a pop of flavor or color.



What a fabulous, sustainable feast! 


Everyone can serve themselves as much or as little of each dish as they want. 


There are plenty of options for our vegans, vegetarians, and carnivores! We honor everyone's dietary preferences and offer something for everyone.



There are plenty of ways to customize a meal like this to one's exact tastes and desires! 



We shared the meal in good company, and even had a friend stop by to enjoy our sustainable lifestyle and learn a bit about cryptocurrencies.



Giving thanks for this great life and fantastic community! 



We even had a blueberry pie for dessert :)

We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indoor wood burning stove in action - it cooks our food, warms our communal space, and heats water for hot showers all at the same time!

And this is one of my favorites. I really enjoy Mexican food. I made enchiladas the other night. Earlier in the week I made tacos. I haven't tried making Mexican lasagna yet. Could you send the recipe? Thanks!

  1. Cook chicken with onions, garlic, peppers, tomatoes, cumin, and chili powder. Squeeze in some lime juice. Alternatively, you could use any seasoned meat you use for tacos.
  2. Oil up or butter a casserole dish or dutch oven. Make a layer of tortillas.
  3. Add a layer of chicken (or taco meat). Can also add a layer of beans or sautéed veggies.
  4. Add a layer of cheese.
  5. Repeat layers to the top of your dish, ending with tortillas sprinkled with cheese.
  6. Bake/heat until cheese is melted.

Volumes depend on how many people you are trying to feed and your exact tastes!
