🌶 [ENG] Greek pita breads step by step!

Fragrant, delicate and completely surprising bread in several scenes! With this recipe, they just have to go well! :)

Pita bread is not worth doing in small amount. First, you can prepare them in many different variants, so it's good to have more portion to experiment, and secondly they simply disappear instantly. :)
In addition, pita is a great replacement for ordinary bread that will make even standard sandwiches turn into a small culinary journey. :)

To make it even more exotic you can prepare for them a quick dip of tzatziki ( recipe is here) or smooth hummus (click for recipe), cut a few tomatoes, add salt and oil and enjoy a delicious lunch ready in the blink of an eye.

This version of pita bread has Greek roots and as you will notice they are more fluffy than flat Turkish which you can know.

I know that some people are a little afraid of working with yeast dough, so I will guide you step by step through the whole process and you will see that it is nothing scary. :)

INGREDIENTS (for 12 pieces)

  • 50g of fresh yeast (at room temperature)
  • 2 teaspoons of brown sugar (or white sugar)
  • 300ml milk (at room temperature)
  • 150ml of water
  • 700g of wheat flour (of which about 100g for sprinkle the dough)
  • 2 teaspoons of salt
  • 3 tablespoons of olive oil (and additional to lubricate the countertop)
  • 3 teaspoons of black seeds (or other adds, of which Im writing lower)

PREPARATION

  1. We start with preparing the yeats base. Add yeast and sugar to a larger cup or bowl and then rub them with a spoon into a plastic mass.

  2. Mix the milk with water and add about 150ml to the yeast with vigorous stirring. Then add 2 tablespoons of flour and mix until all the clumps disappear.

  3. Pour the rest of the milk and water, mix and leave for 10 minutes in a warm place. The point is for the yeast to start working and a fine foam formed on the surface of the mix.

  4. Sift 600 g of flour into a bowl, add salt, black seeds (or other adds), olive oil, mix and pour the rest of yeast liquid. Start mixing with a spoon and then you can go to "manual mode" - for me it's super fun! :)

  5. When the dough is pre-joined, we put it on the counter topped with flour and knead about 10 minutes until it starts to be easily removed from the hand. If necessary, sprinkle them with flour until it has a uniform, smooth consistency. Give a lot of love to dough and it will repay you with beautiful, fluffy breads! : D

  6. Spread the large bowl with olive oil, carry the dough inside, cover with a cloth and leave to rise for an hour.

  7. Pour out a few tablespoons of olive oil on a countertop, spread and lay out the dough. Knead it for a moment to let the air out of it. The dough is formed from a roll (it does not have to be beautiful), cut it in half, each half again in half, and each of the four portions formed cut 3 fairly equal parts. Thanks to this we have material for 12 breads.

  8. Form each portion into a ball by wrapping the dough in until it becomes smooth.

  9. Heat the pan or grill to medium temperature. We lubricate the shaft with oil. Roll the dough ball into a cake with a diameter of approx. 20 cm and place it on a dry pan.

  10. Bake for 2 minutes, invert, bake another 2 minutes and remove from the pan on baking paper. Roll the next ball and bake more pits.

Cool down the pitas and place them in a haversack or bag. They stay fresh for 2-3 days, but I know from experience that they can disappear much faster. ;)

Instead of black seeds you can use other additions:

  • whole cumin seeds (3 teaspoons)
  • fresh, chopped thyme (2 tablespoons)
  • chopped rosemary (2 tablespoons)
