Quick and Easy but Tasty Fillings for Sandwich Lovers - Part 7 - Veggies and Fruit, It's Good For You

My grandson has been learning about healthy and unhealthy foods the last couple of days. Veggies and fruit are good for you, bread not so much, unless it is brown bread. Sometimes I'm not sure if bread is really good for you, but since this post, as the other 6 in this Quick and Easy but Tasty Fillings for Sandwich Lovers, totally deals with bread as the main ingredient, we so do need bread.

This is also the FINAL post in the series on sandwich fillings for all you sandwich lovers out there.

The idea of using vegetables and fruit may at first sound strange in a broad sense, but when you really think about it... tomatoes, lettuce, cucumber, onions, radishes and avos that are nearly staple "ingredients" for sandwiches, are vegetables.

There are, however, so many other vegetables that you can use as sandwich fillings. I can remember as a child, I loved to eat sandwiches with left-over sweet mashed pumpkin. It was a great substitute for jam.

Another favourite filling from my childhood was left-over cooked green beans. My late mother always cooked green beans with potatoes and onions, flavored with salt and just a pinch of black pepper. The potatoes and onions were then mashed lightly so as not tocrush the green beans. A dollop of butter added to these ingredients and you totally had the perfect "nightmare" vegetable for a child. But oh boy! When the beans were cold, it tasted like heaven between two slices of home-baked bread.

In later years, one of my favorite sandwich fillings was made with thin slices of Granny Smith apples, Cheddar cheese and mustard.

Let me stop these reminiscences of childhood sandwiches and share 15 ideas with you for using vegetables and fruit as sandwich fillings.

Sandwich Fillings Made from Vegetables and Fruit:

  1. 3 mashed avocados, 125ml finely chopped nuts, 125ml cooked, chopped bacon, 50ml lemon juice, 15 ml each Worcestershire sauce and curry powder, 2 ml of sugar, pinch of cayenne pepper, salt and pepper.

  2. Mashed avocado, finely chopped onion, lemon juice, dash of Worcestershire sauce, salt and pepper to taste.

  3. Mashed avocado, 60g shrimps, 30ml sour cream. Freshly chopped basil, 10ml lemon juice, salt and pepper to taste.

  4. Grate cucumber, sprinkle with salt, leave for a few minutes, then rinse and drain thoroughly. Mix with mayonnaise or plain yogurt and finely chopped chives.

  5. Mix the following together - finely chopped, uncooked cabbage, raisins, grated Gouda and salad dressing of choice. Spread on bread.

  6. Mix chopped pineapple and grated Cheddar with salad dressing, spread on bread, top with a slice of ham and lettuce strips.

  7. Soak prunes overnight in fruit juice of choice, drain and chop the next morning. Mix with finely chopped nuts, raisins and peanut butter.

  8. Mix 250ml drained, crushed pineapple with 125ml mashed bananas, and 125 ml finely chopped walnuts and cream cheese.

  9. Equal parts minced raisins and peanut butter with mayonnaise. Add salt to taste if desired.

  10. Mashed dates with dash of lemon juice.

  11. Mix 125g finely chopped dates and 2 mashed bananas with 100 butter or margarine.

  12. Mix marmalade of choice with finely grated carrots and salad dressing to moisten.

  13. Chopped nuts, finely chopped celery, banana slices on cream cheese

  14. Mix chopped pecan nuts and grated carrots with cream cheese and mayonnaise. Add garlic salt to taste.

  15. Chopped walnuts, chopped olives, finely chopped parsley, cream cheese, mayonnaise and salt to taste.

    What more can I say about sandwiches... sandwiches are great food, sandwiches are comfort food! Sandwiches are here to stay.

Oh wait!!! I so totally forgot about peanut butter! On second thoughts, no ideas for fillings... I am sure there are some fillings that use peanut butter somewhere amongst all the filling ideas I supplied. And besides, there is only one way to eat peanut butter... straight out of the bottle! Maybe sometimes on a slice of bread as well?

Wow alrd melting looking at all sandwiches above! Yes, my whole family love sandwiches esp my hubby, in fact, he can make a better sandwich dishes than me and I don't bother at all! I love making a chicken sandwich with spinach and berries and also with some nuts in it. Its delicious ;)

@esdee - Your chicken sandwich with spinach, berries and nuts sounds delicious indeed. Chicken is my favourite meat and I should really remember this combination of yours.
