Quick and Easy but Tasty Fillings for Sandwich Lovers - Part 3 - The Great Cheese Adventure...

So many different kinds of cheese, so little time to taste them all. Today is the 3rd in the series about sandwich fillings and I think it is time to cut out the small talk and just provide you with the 20 fillings I promised yesterday.

Oh wait, maybe a photo with lots of different kinds of cheese to whet your appetite.

Now this is what I call a cheese heaven

Let's make some sandwiches with cheese fillings now.

You will see that nearly all the fillings in the first part use Gouda or Cheddar cheese. You can however, substitute it with your choice of yellow cheese. Remember these are really just suggestions for fillings and you can mix and match the ingredients to taste.

Cheese Fillings Part 1

  1. Grated Gouda cheese moistened with salad dressing and combined with one of the following -
    ◦ finely chopped nuts and chutney
    ◦ cooked, mashed chicken or ham,
    ◦ finely chopped nuts and/or olives
    ◦ anchovy paste, a little vinegar, prepared mustard and cayenne pepper,
    ◦ finely chopped green sweet pepper and a few drops onion juice
  2. 50 g (125 ml) grated Cheddar cheese, 50 ml chutney, salad dressing to moisten
  3. 50 g (125 ml) grated Cheddar cheese, 50 ml finely chopped pickles or olives, 125g butter or margarine, salt, pepper and a pinch of cayenne pepper.
  4. 1 cup grated cheese, 2 teaspoons chopped sweet red pepper, 1 teaspoon prepared mustard, 2 tablespoons mayonnaise, salt and cayenne pepper.
  5. Finely grated Gouda cheese, finely chopped preserved ginger, salad dressing to moisten.
  6. Finely grated Gouda cheese, honey to taste, dressing to moisten.
  7. Mix 200g crumbled ricotta with 1 chopped tomato. Add 2 finely chopped leaves of basil, 30 ml olive oil, salt and pepper to taste
  8. Grated Edam, a few toasted walnut pieces and lots of mixed salad
  9. Feta with lemon: Mix 200g feta cheese with finely grated rind and juice of one lemon. Add 50ml olive oil and mix well. Season with chilli salt, freshly ground black pepper and thyme.

Cheese Fillings Part 2

With cream cheese/cottage cheese or your choice of white, soft cheeses

  1. Cream cheese and canned, crushed pineapple Drain thoroughly before adding to the cream cheese
  2. Cream cheese, chopped almonds and shredded lettuce.
  3. Cream cheese, grated carrot, mayonnaise and salt to taste.
  4. Cream cheese, tomato sauce to taste and pinch of mustard
  5. Cream cheese with chopped onion, chopped green pepper and a dash of mayonnaise
  6. Cream cheese with chopped anchovies or mussels
  7. 500g cream cheese, 15ml curry powder and 2 ml of salt (optional)
  8. Cream cheese, chopped olives, chopped onion, mayonnaise
  9. Mix 250g cream cheese, 10ml prepared mustard and 1 clove garlic pressed or finely chopped with 25ml milk to a soft consistency.
  10. Cottage cheese mixed with a few well-drained sun-dried tomatoes, chopped, spring onions and chopped fresh coriander.
  11. 500 g chunky cottage cheese, 30 ml finely chopped pickles, 1 finely chopped sweet green pepper, 15 ml finely chopped parsley and/or olives, 5 ml prepared mustard, mayonnaise to moisten.
  12. 75 ml cream cheese, 50 ml crumbled Roquefort, 100 ml chopped nuts,
    50 ml finely chopped onion, 5 ml Worcestershire sauce, 2 ml of salt, 50 ml mayonnaise

So there you have it... 20 ideas to use cheese as a filling on a sandwich... hmm, if you really count it, it is actually 26 ideas...
