Mackerel marinated in orange

Mackerel refers to fish that has its own bright taste. The more interesting it was to learn the recipe of the marinade, which this taste does not drown out, but complements and brings to a completely different level.
Today we have a complex dish and in addition to the main character, we will prepare an interesting vegetable garnish and an light salad.

Ingredients:
Basis
- Mackerel fillet, 4 PCs. (i.e. from two fish)
- Orange, 1 PC.
- Chili pepper, 1 PC.
- Coriander seed, 0.5 tsp.
Garnish
- Garlic, 2 cloves
- Zucchini, 1 PC.
- Carrots, 2-3 PCs. .
- Mint 10 gr.
Salad
- Red onion, 1 PC.
- Cilantro, 10 gr.
- Salad, 50 gr
- Balsamic vinegar, 10 gr.
- Olive oil, salt, pepper
Preheat the oven to 200 °C.
Carefully cut the pepper, throw away the seeds and cut off the required amount (depending on your love for spicy).
Remove the zest from the orange, clean, cut out the slices, and squeeze the juice from the remaining pulp and films.
Mix in a bowl all the ingredients except the orange's slices (they will go to the salad), add salt, coriander and two tablespoons of olive oil.
The skin of mackerel make cuts in increments of a centimeter, and put the fish in the marinade for 10-15 minutes, and then spread on a baking sheet skin side up and bake it in the oven for ten minutes.
Finely chop the garlic, mint leaves, medium-sized fragments, carrots, and squash peel and cut into thin slices with a vegetable peeler.
Heat a small amount of vegetable oil in a frying pan and fry the garlic for 30 seconds.
Add zucchini with carrots and fry for five minutes.
Add mint, stir, warm for a minute and remove from heat.
In a deep bowl, mix the lettuce, thinly sliced red onions, chopped cilantro and orange slices remaining in the first stage.
Salt, pepper to taste, add two tablespoons of olive oil, balsamic vinegar and mix.
Serve.
