Cutlets "Caprese"

Recently I talked about salad in the style of a wonderful Italian snack, and today we will make delicious cutlets with Caprese.

Ingredients:
For cutlets:
- Minced chicken, 360 gr.
- Cherry tomatoes, 100 gr.
- Mozzarella cheese, 50 gr.
- Green Basil
For garnish:
- Red onion
- Eggplant
- Zucchini
- Bell pepper
- Green peas
- Lemon
- Sugar
- Oregano
- Smoked paprika
- Black pepper, salt, vegetable oil
Preheat the oven to 180 °C.
Rub cheese on a coarse grater, finely chop Basil leaves. Minced salt, pepper to taste, form 4 cakes and put in the center of each Basil, tomato and cheese.
Close the edges, forming cutlets, spread in a baking dish and bake in the oven for 20 minutes.
Eggplant and zucchini cut into medium cubes, add oregano and paprika, salt, pepper, mix and set aside for 5 minutes.
Cut the bell peppers and onions.
Fry onions in a pan for 3 minutes.
Add zucchini with eggplant, pepper and cook for 10 minutes over medium heat.
Add peas, crushed zest and juice of half a lemon, sugar, salt. Stir, cook for three minutes, add the vegetables to the cutlets and bake all together for 5 minutes.
Serve with tomatoes and Basil leaves.
