How to Make Perfect Fries in 7 easy Steps:

For many years now I have listened to various restaurateurs describe their unique methods for making the perfect French Fries (Chips). Today I went to a restaurant which never compromises with their food, and while I was eating there today, I discovered their 7 step method to making perfect fries. Their fries are near perfection so listen carefully, if you wish to make it to Fries-Nirvana.

How to make the Perfect Fry

1. Find the Right Potatoes

Choosing the right potato is an important place to start. Apparently floury potatoes with high starch levels and low moisture and sugar content are the best. This will ensure perfect and crispy fries.

2. Cut the Potatoes into Thick Wedges and Soak.

After cutting the potatoes into thick wedge pieces you should soak them for 2 nights in cold water. This removes the starch and will stop them from sticking together. It also helps to achieve maximum crispness.

3. Drain & Dry.

After 2 nights you need to dry them thoroughly as any moisture will detract from crispiness and cause the chip to absorbe too much oil.

4. Initial Fry

Fry the potatoes in oil at 150c so they are cooked throughout but not changing colour. This first fry simultaneously cooks the potato and keeps them fluffy and creamy.

5. Cool and Freeze Overnight.

Freezing at this point locks in the flavour and prepares them by lowering the temperature before the final fry.

6. Fry Again

For the next fry, cook them for 6 minutes at 180c. Once this is done you should now have fries that are fluffy and creamy on the inside and have a golden crispy exterior.

7. Salt

Sprinkle them lightly with sea salt and your fries are now ready to eat.!

The Finished Product


Yes, it seems like a lot of work to make some humble fries, but if you are going to do something, you may as well do it right. There is a massive difference in taste between an OK fry and an amazing fry! Enjoy!

I had heard about the freezing stage, but the leaving overnight for 2 days is new to me.

As a Brit, I´d like to suggest adding vinegar before eating! :)

Everything tastes better with vinegar, and I love the smell of it :)
