Prime Ribeye Cap (Prime)
Everyone always says Costco has such good prices, but I have always thought the beef prices were HIGH. Until I did a little research. In the U.S. they have 3 meat grades.
- USDA
- USDA CHOICE
- USDA PRIME.
Most store sales meat seems to be just USDA, where Costco only sells CHOICE and PRIME.
After realizing that, I don't feel so bad about the price, the steak does taste better, but I still have yet to buy the prime. I am not loaded, but my wife and I will be celebrating soon. Our celebration will include the PRIME Rib-eye Cap steak. They look so good, and they better be for 19.99 a pound.
The category 1 that you mentioned just as USDA is actually USDA Select. When you see only USDA printed it is Select. Choice is a good overall option for many cuts. Save the Prime for special occasions and cuts like you mentioned. :)

very interesting post.this is my first time here.i found so many interesting stuff in your thread especially its discussion..
If one knows how to cook it (sear is key!), buying a prime cut or a filet and cooking at home for celebration is awesome; even if it's more expensive than the normal cuts it's less expensive than paying for the mark up at the restaurant.
Regardless, quality cuts are expensive. Hopefully with the acquisition of Whole Foods by Amazon, there will be some price pressure on all of the other stores across the board (even box stores) to lower overall prices.
Ya I could get use to eating finer meats a lot.

Selling my In-Laws house. Should hopefully melt, Isn't that the best looking meat.
