Heat some oil in the pan and put in it the hollow part of the bread slice. Lightly (no more than a minute) fry it on one side. Turn it on the other side and put the fresh eggs inside the bread. Photo source: Own photo! ~ © steemit.com/@ana-maria ~ All rights reserved!
During frying, you may lean the pan on the side a bit and with a spoon grab some oil to pour over the eggs. It would help upper side of the eggs to fry quicker. When the eggs are fried, take them out of the pan as well as the most of (if not all) the oil. Then put in the already chopped middle of the bread and fry it a bit too first on one side. Photo source: Own photo! ~ © steemit.com/@ana-maria ~ All rights reserved!

I have done a version of this in 2015... with bacon included.
I am a fan of eggs and once also did a burger with a hole and a fried egg in the middle. The big trick is to narrow the time to finish the egg fast enough so the burger is all good at the same time.
The bread version... I have done a couple times. Once I have experimented with, punching (with cuttelry) the egg just before serving... making it a KIND of Picasso picture!

And yes, I agree that the trick is to fry the eggs as quickly as it's possible not to over-fry the bread.
I use a slice of Capsicum as an edible egg ring quite often. And I've done something similar to this with bread, but you make the hole just a bit bigger than the yolk, so the white soaks into the bread

Really?! - Didn't come across any so far. I'm doing it not for years, but for decades by now. My kids loved when they were kids same as they do now when they are grown up. 🙂
Btw - if you are not a breakfast person it's could be made at some other time of the day for some other meal (e.g. supper). 😉 (In case you would not go to bed immediately after.) 😉

Sprinkle some black pepper, oregano and some fresh green cilantro leaves...some cucumber slices with tomato slices...grated beetroot on top of the egg toast!!!
A dip...may be tomato sauce or mustard sauce with the bread dices to add tang to the whole preparation...to enhance taste...Wowwww....:) LOL
