Friday Night Eats | Spicy Southwest Chicken Taquitos and Guac!
Salutations my friends! It’s Friday night! Anyone hungry?
My friends over at @FoodFightFriday are always hungry so I thought I would share a little spicy number I think they might enjoy! If you’re not familiar with this Friday Night Fight, you have to check it out! Loads of great food creators show up each week, all making mischief in the kitchen. Thanks to my #fff friends for hosting this gathering, so much fun and such a great group!
Spring is in full swing...
at the nest! The dragon flies are busy chasing the mosquitoes, the birds are chirping and my roses are in full bloom! Just a brief glimpse before we hit the kitchen!
It’s been a hot day today, but when you’re in the mood for spicy food heat is what you want! Today the Birds are chirping for Southwest fare. When my daughter and her husband were living with us we used to have Taco’s at least once a week. Now we rarely have them so tonight it is!
Hold on to your hats, Bird’s Friday Night Eats are on the way!
The Spicy Stuff
- Green Onions
- Mini Peppers
- Garlic Cloves
- Fresh Corn
- Green Chilies
- Black Beans
- Olive Oil
- Cumin
- Chili Powder
- Cayenne Powder
- Sriracha Sauce
- Egg Roll Wrappers
- Chicken Thighs
- Bird’s Guacamole
I slapped on the Apron…
and sautéed those thighs in a dash of EVOO while washing and dicing the veggies in tiny pieces. This bird can multi-task let me tell you!
Nothing like a fresh…
ear of corn, minced up in no time flat!
The yummy smell…
of onions, garlic and peppers through the house! The chicken was diced and everything sautéed for about 15 minutes while I prepared the wraps.
Wrapped and ready…
and into the oven they go. Notice that quality control lol A hot 400 degrees and 15 minutes to wait!
Meanwhile with wings flying…
the Bird whips up guacamole with ease! Just in time, the oven’s calling!
Kick your feet up and grab the chips my Spicy Friends! Enjoy!

These are just sinfully appealing. Egg roll wrappers, no less. That's a clever idea!! With guacamole, salsa and sour cream!! Or maybe some chili con queso! I promise you, 9 wouldn't be enough. I really do want to try this idea. (Lord, just think of what all you could do with it!!) This one's a hit!
Yay! Glad you enjoyed them. Yes, sometimes I crave spicy southwestern foods (I must admit I made these a little to spicy for Mr. B but of course he gobbled them up anyway) I used a whole package of egg roll wrappers and could have made more. Thought about freezing them and then thought, no they won't last long lol
Then he sure doesn't want to eat at my house. "Too spicy" is an abstract concept that may apply to some people -- but not around here. (Before @catweasel and I got married ... while he was still living on another continent, I made it clear there were three qualifications for a long-term relationship. #1 was ... "eat what's put in front of you." #3 was ... "otherwise ... leave me alone!!")
(I'll tell you #2 ... if you insist. Think twice.)
He was SURE he had died somewhere along the line and somehow got into heaven. "No problem," he answered. He's been true to his word.
hmmmm I always knew you were one smart cookie! I should have thought about that 42 years ago, lol jk I worry sometimes if something were to happen to me he would starve to death! CW is one lucky guy and he knows it!
Well, well, well, southwest egg rolls just got real.

hehe, thank you @dandays! Well, they lived with us for about 1 1/2 years, it enabled them to save for a nice down payment for their first home. We had a lot of fun with them living with us, in fact they have said many times we could come and live with them in Denver, lol
Oh man, iheart Denver! All the way from Florida to Denver, though? That’s a little bit of a distance when it’s time to see your daughter. Colorado is gorgeous.

😂😂😂 the fasting month will start on monday😉 then I'll do the cooking everyday then.. for now, I took a week off, rice and salty fish in Sambal lado is enough with some fried tofu and veggie stew for my FIL..😊 just common dishes that I already shared on steemit before.

Yep, that’s drool on my shirt. You might think I’m cool because my shirt says “guns n’ roses” but that’s definitely drool on my shirt. Haha… is there anyway to request an economy size serving of these? I mean you could personally deliver them and we could scarf em at the beach? Great recipe @birdsinparadise.
