“What’s for Lunch?” Healthy Recipe Series #20 - Vegan Black Bean Soup w/ Pico De Dallo

Spring heralds warm weather, bright sunshine, and blooming things, but the next few days in Wisconsin are going to be cool and rainy. We’re a little late with the fruition of “April showers bring May flowers!” Needless to say, I’ll be staying inside while waiting out the storm and I’ll want something warm to soothe my soul.

Black Bean Soup w/ Pico De Gallo

Ingredients:

  • 1 tbsp. oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp. dried oregano
  • 1 tbsp. ground cumin
  • 3 plum tomatoes, diced
  • 3 cans black beans, rinsed
  • 5 cups broth
  • Chipotle cream (if desired)
  • Pico de Gallo (if desired)
  • Salt & pepper, to taste

Instructions:

  1. Heat oil in a large soup pot.
  2. Cook onion until transparent and add garlic, oregano, and cumin. Cook another 2 minutes.
  3. Add the tomatoes, beans, and broth. Simmer 15-20 minutes.
  4. Purée half of the soup in a blender until smooth and then return the mixture to the remaining soup.
  5. Top with chipotle cream, pico de gallo, and salt/pepper if desired!

Unfortunately, my version of this soup was not vegan since I used a little butter and chicken broth. I also do not like cilantro (which is a main aspect of pico) so I skipped it and dipped fritos into the soup instead! The crunch was amazing and the soup was actually filling!

The next time I make this dish, I’m going to follow the recipe provided but simply skip the cilantro!

Pico De Gallo:

  • 1 bunch cilantro (SKIP)
  • 1/2 red onion, diced
  • 8 plum tomatoes, diced
  • Juice of 1 lime
  • 1 tsp. garlic powder
  • 1 jalapeño pepper, seeded and minced
  • Salt and pepper

I think plopping a heavy scoop of pico on a chip and then dipping it in this soup would taste AMAZING. I can’t wait to make it again!
