The musical bread...
Seeing the results of today's baking I was reminded of some music. First Alan Parson's Project's "What goes up (must come down)" because while the bread had risen to the top of the tin when I put it in the oven it surely came down while baking. Looking at it from the side I thought of Thomas Dolby' album "The Flat Earth" (if you don't know it go and listen to it - it's brillant!).
Since my sour dough is still new I but a bit more yeast than normally into the dough. Obviously I waited too long with baking and the nice air bubbles were all gone when they were needed. Doesn't matter, bread is there to be eaten and not to be looked at!
PS: The bread knife looks old because it is: it's at least 70 years old and used to belong to my grandmother. Still sharp, still working - that's the famous German craftsmanship ;)

Als ich eben das Brot aus dem Ofen geholt habe musste ich an Musik denken. Erst an Alan Parsons's Projects "What goes up (must come down)": als das Brot in den Ofen kam hatte es die Form bis zum Rand gefüllt, war aber beim Backen ziemlich zusammen gesunken. Und der Anblick von der Seite ließ mich an Thomas Dolbys "The Flat Earth" denken: yep, ganz schön flach (das Brot, das Album ist super).
Tja, weil mein Sauerteig noch etwas schwach ist hatte ich mit Hefe unterstützt aber wohl die Zeit falsch eingeschätzt und zu lange gewartet mit dem Backen. Egal, das Brot soll gegessen werden und nicht angeschaut ;)
PS: das Brotmesser sieht etwas mitgenommen aus, aber es ist schon über 70 Jahre alt und von meiner Großmutter. Schneidet immer noch hervorragend - tja, deutsche Wertabeit ;)

Flours: mostly wheat (550) and some leftover spelt + whole wheat.
That's the story of my baking all the time : it looks great inside the oven; I take it out and it's sunken, @muscara... As long as it's tasty though.
Incidentally all that reminded of one of my favourite songs by the Alan Parson Project - because I could actually sing along to it :D

Wow ein schwarzes Messer, beeindruckend. Und das Brot auch - zumindest auf dem Foto sieht es sehr groß aund lang aus und ich bekomme Hunger) Und solange du nur beim Brot an die flache Erde denkst ist alles gut :-D (Ich denke da weniger an Musik als an wirre Verschörungstheorien -Flat Earth)
Wenn ich das Messer genug schrubbe wird das auch normal metallisch, wird aber schnell wieder dunkel. Also wozu dran rum scheuern?

Great bread and knife (same as @neumannsalva wrote). Great German culture :) I also still mix in dry yeast as my sour dough is young. It's reduced by 1g so soon I bake full sour dough risen bread. Spannend!
Bread baking and music is an interesting topic. I mostly listen to podcast news but nice to have music especially I kneed dough by hand. I must think about what comes on my mind.
