👸 Cook with us | March week 1 | Cod with blackened sauce

This was a favourite family meal that I made in South Africa and in London. Living in Cape Town the fish is easily prepared on the fire along with the vegetables, however
in London the dish is made in the oven.

The sauce is easy to prepare, I use a bit of lightly salted soy sauce, a few tea spoons of honey, freshly grated ginger and chilli flakes. Feel free to taste for perfection. Accompanied with the cod, I steamed asparagus and baked sweet potato in the oven and sprinkled olive oil and seasoned with salt and pepper.

The cod is baked in the oven for 20 minutes with the sauce added.

Being a Capetonian, I love cooking with wine and I have found a KWV Chenin blanc to accompany the fish today as it is light with a crisp finish.

It was an interesting experience shopping in Cyprus as it is very different to the likes of London/ South Africa, however my new family definitely enjoyed it.

This looks absolutely delicious! The sauce with salty, sweet and spicy flavors is something I would definitely enjoy. It is always an adventure to shop for foods in a new place. It is a great way to improvise and add some of the local ingredients to an old favorite dish. Your photos are great too. Thanks for sharing your family recipe! I was wondering about one thing you wrote. When you said that the fish and veggies are easily "prepared on the fire", do you mean that in South Africa you cook everything on a grill?

Looks so fancy and yum! especially, when pairing with the wine :D The ingredients you use are all my favs too, sweet potatoes, asparagus and cod!

I can see how this is a family favorite. The combined flavors of the ingredients for the sauce definitely works well with cod.
