Cook with Us #2: Schneenockerl - Dessert with many names!

A three-ingredient meal? Um, it sounds hard and it's hard, but as soon as I saw this competition, I remembered a little forgotten but at the same time famous delicacy - Schneenockerl, also known as eggs in snow, floating island, bird's milk ... This dessert is known in almost all European countries. In the Balkans, this delicacy is called Šnenokle or Paradižet. I read somewhere, I don't know when I don't know where, that the recipe for Schneenockerl, is the oldest written recipe for dessert in Serbia.

But, let's get started. Here's the recipe

Ingredient:
1/2 l whole milk
3 eggs
1 spoon of flour
4 tablespoons of sugar
2 tablespoonfuls of vanilla sugar

Warm the milk and vanilla sugar in a saucepan over a medium heat, until it reaches 80 degrees C.

While the milk is getting warm, separate the egg whites and egg yolks. Then beat the egg whites until stiff peaks form. There are recipes when sugar is added to the egg whites. I avoid sugar whenever possible, because the dessert is healthier then. Believe me, the Scheneenockler will be sweet enough, though there's no sugar in the whites.

Take a spoonful of beaten egg-white and use a second spoon to form a quenelles with it. Drop the quenelles into hot milk and let it cook for 1-2 minutes. Flip it over and cook for another 1 minute. It's very important that the milk is not boiling while you're cooking the quenelles in it, because it will crumble. Take the quenelles out of the milk and put them in a bowl. Repeat until you've used up all the egg whites. It's crucially that you don't cook quenelles long, because it will be like a rubber.

When all the quenelles are cooked, we make cream.

Take one cupe of milk in which we cooked the quenelles. Whisk together the egg yolks and sugar in a bowl beating until frothy and pale yellow. Then add flour and mix. After that add the one cup of milk you reserved and mix again. Pour the mixture back into the pot with the remaining milk and cook at medium heat until the cream thickens.

To serve, into serving bowl pour the hot vanilla cream over the quenelles and let it cool.

Epilogue

These simple, delicate, tasty, soft white little clouds are a dessert that reminds me of childhood. There are more reasons why I love Schneenockerl - they're low-calorie, they're done in about 30 minutes, and when I serve this dessert to my friends, they are delighted, because they didn't eat this meal recently.

Île Flottante! I love that dessert. It feels light and fluffy and just simply a nice end to a meal. This dessert came to the Balkans with Austro-Hungarian, so we use the Austrian name for this dish. I'm glad you like Schneenockerl. I think that vanilla cream has enough sugar, so I don't add sugar to quenelles. I know that sugar is mostly added to white. I like the concept of your competition, so I will continue to follow it :)
