So, What is human being and what is being human??

Being Human simply means that one needs to be compassionate, kind, understanding, empathetic and all the qualities that show you’re a human who can value the opposite person’s feelings.

Whereas Human being is a man or a woman or a child who are intellect.

Human being - any living or extinct member of the family Hominidae characterized by superior intelligence, articulate speech, and erect carriage

This is how science differentiates human beings from animals.

Being human

is little more than science, and this is how it works.

The major difference is of "responsibility".
"human being", means like any other being , busy in four basic living activities of life like, eating , sleeping , mating and defending.

This is the common amongst all the beings with little differences of quality and quantity.

But

"being human", means the responsibility of aspiring and achieving self realization.

The very first aphorism of vedanta sutra says

"athäto brahma jijïäsäù"

Which means that, as you have got the human form of life , inquire about the Absolute truth.

Soul passes through many bodies in many lives, living the life like an any other"being", but when he comes to the human form of life then it is expected that he make an inquiry about the Absolute truth, which is not possible to do in any other form of lives.

Therefore this is a special responsibility on us"being human", so that they can permanently stop the cycle of their repeated birth and death and go back to kingdom of God.

This is meant by "being human".
