Sous vide Sweetbread

Sweetbread is a real delicasy.

When i make them it's kind of a special proces but any delicasy deserves a little more attention.

First i cook them in some milk. Wait until it is at cooking temperature then let it simmer for 3 minutes. Take them out and cool them down.

Now you can start peeling them.

Put them in a vacume bag with some salt and good arbequina olive oil.

Then i put them in my Roner, which is my waterbath. With a temperature of 66 degrees.

Cook them for about an hour. And then cool them down with lots of ice.

Now you can start working with them.

This dish was just a little experiment. I've put them in some panko in the frying pan. And served them with some fresh tartare sauce, pickled red onion and edamame beans.

Easy dish but if you like sweatbread you'll probably like this one.

That looks super easy and they look amazing. nice presentation. However, what is the raw ingredient that you started with in the first few pics? i couldnt really tell what it was. Was that just dough? I would love to make these, but not sure how hard it really is. im an ametuer cook, but I can do the basics. would you say this is a dish anyone could cook?

Forget the sous vide man, just cook them in milk. Cool down and peel. Then bake. I made these with egg white, flower and panko(Japanese bread crumb). Fry them in it and ready. Cheers

Looks great! I bet they are very juicy on the inside. Sous Vide is such a great method of cooking.

Yes they are, just don't leave them in the fryer too long.

Great post @tomber! We love sweetbreads, but have never dared to make them at home. They're supposed to be a real pain to clean, right? These look great. Upvoted and following :)

Thanks. Yes peeling them is a bit of a challenge but it's worth it. If you would like to cook them at home you can also cook them longer in the milk and forget about the sous vide proces.
