Pork Skewers With Vegetables + Green Asparagus

Hello dear Steemians! How are you today?

First of all, I would like to apologize for the first readers who read the unfinished content of this post today on mid day. I erroneously clicked the submit button when I was making the draft. So, here is the final content.

I´m here again to blog another edition of food... and I will be sharing with you on how I prepare pork skewers and the green asparagus. As we all know, there are two types of asparagus , the white and the green one. I prefer the green one because for me it´s more tastier than the white one. We have one of the best asparagus varieties in town known as the Marchfelder Asparagus.

They are grown in the fields located in the border of Vienna and Lower Austria that aren´t far away from our home. I´m sure that in the coming weeks until summer, the market will be flooded with these very healthy vegetables. It is one of my favorites, so I will be expecting them always and will buy more ...more supplies in the market mean its prices will surely be cheaper. At the moment, a bundle of 500 grams costs around 4 Euros in the market.

Today has been one of those marathon cooking sessions I´ve had before which reminded me of my working days in the office, and I mean it literally. As I will be busy next week, I cooked 3 different dishes and froze them so that I do not have to work in the kitchen in the next days. I used to term it marathon because it was really a run for the time to cook 3-4 dishes by multi tasking which meant use various pans at the same time. I was a a corporate zombie and got stressed all the time because of the nature of my job...time factor was very important, so I had to do the cooking over the weekend.

HOW I PREPARE THE PORK SKEWERS

I make pork skewers or soup whenever there are meat-rest from my cooking marathon...that is the easiest way to get rid of the meat. Often times, when I make them , I would normally choose the meat for pork chops and buy it uncut, freeze and thaw them when needed. This meat is tender and has a bit of fat streaks that would still make the meat moist. And also it doesn´t really need longer grilling on the charcoal or griddle pan to get it done... So below here is how I do mine:

Cut the meat into thin strips about a finger long and insert each in the skewer either use bamboo or metal skewers. Add vegetables you like i.e. here, I added cherry tomatoes, zucchini, bell peppers and cut onions. Any veggies you like will do. Then rub or brush a bit of soy sauce for both sides of the meat and veggies, add ground pepper or if you want to add ground garlic (dried) go ahead.

You may brush a bit of cooking oil on each side and marinate them for a about 20 minutes before grilling. It´s up to you which grilling method you choose, you can use charcoal , oven or grid pans. The grilling method I used here is the grid pan with 2 tablespoons hot oil and I simply fried each for about 2 minutes on both sides. Transfer to a platter and keep warm til serving.

HOW TO COOK THE GREEN ASPARAGUS

Ingresdients:

500 grams green asparagus
Butter
2 cloves garlic, crushed
soy sauce
salt and ground black pepper

Preparations:

1... Again, I have two methods of cooking this vegetable to make them soft. Depending on the thickness, either I steam or boil for about 4-6 minutes for the thin ones and 5-8 minutes for the thicker ones. Either way is fine, just don´t overcook or the color of each stalk gets pale. Transfer the asparagus in a container with cold water, add ice cubes so that it gets a cold shock.. this shock process will help retain its green color. After a while when asparagus has cooled off , transfer them in a colander and dry them with a paper towel removing excess water.

2... In a frying pan with 2 teaspoons butter , fry the the asparagus and sprinkle a teaspoon of soy sauce on them stirring carefully not to damage its tips. Brown all sides , season with a little of salt and pepper, add a dash sugar or sugar substitute called Stevia powder. Remove from the pan and transfer on a platter and keep warm til serving.

3... In the same pan with pan dripping, add 1 tablespoon cooking oil and fry the tomatoes , same as with the asparagus, sprinkle a teaspoon of the soy sauce and fry both side til all are brown, season with salt and ground pepper. Arrange the pork skewers side by side with the asparagus and grilled tomatoes in a serving dish and serve hot with either potato salad or cooked rice.

Der Grund, warum ich Eiswürfel einsetze, ist, dass damit der Spargel einen Schock bekommt, der Eisschock macht den Spargel seine grüne Farbe behalten. Danke für deinen Besuch.
