Let´s Create A Simple Lunch - Cabbage Pasta With Green Asparagus And Vienna Sausage Called Burenwurst

There are so many types of viennese sausages , it´s not just the frankfurters or hotdogs (USA) but there is much more. In Austria , Germany and Switzerland, there are a hundred types of sausages that are being offered in the market. Each wurst (sausage) as they call it in german, has its distinctive processing , some are smoked, some dried , some raw, etc. Just like the cheese, they are also produced and known for its region as to where they come from.

One of our favorite sausages is called Burenwurst or sometimes known as Klobasse, and this is what I have here in today´s content. Burenwurst is made of ground pork with bacon and fat and can also be bought by the meters....LOL, could you imagine having 2 meters long of that sausage in your fridge?!!! I used to buy it at the fresh market and here you pay for its weight not by the length. This sausage is usually for boiling to have it knackig (the skin becomes crispy) not for frying! With a good Kremser mustard which is a bit sweeter, it tastes perfect!

The Imbiss or hot dog stands are so popular among locals and tourist as well, especially in areas where people come and go. The city center of Vienna has some of the so called Imbiss ( see pic below) that serves this sausage.

Today, I am featuring a simple austrian dish called * KRAUT FLECKERL* in german, a dish that is a combination of cabbage, pasta and onion rings, and garlic.. all stir-fried. And this is normally eaten with any type of sausage but for this purpose I am featuring here the Burenwurst and the pasta I used here is a spiral noodle.

CABBAGE PASTA AND KLOBASSE

Ingredients
a pair of sausages of your choice
1 head young cabbage, cut into strips
1 big onion, sliced into rings
2 cloves garlic, crushed
4 cups spiral noodles or egg noodles boiled according to
- manufacturer´s instruction
olive oil for frying
soy sauce
salt and pepper
sugar ( or sugar substitute Stevia powder)

Preparations

1..Place the sausages in a deep casserole filled with water, let boil and simmer for about 5-6 minutes under low fire... keep sausages warm.

2... In a bigger frying pan with 3 tablespoons olive oil , fry the crushed garlic, add the onion rings, keep on stirring til all are golden brown in color. Add the cabbage strips, sprinkle with 1 tablespoons soy sauce and stir until well blended. Add the cooked pasta and mix well until both pasta and noodles are well combined. Season with salt and pepper according to taste then add 1/2 teaspoon sugar ( equal parts of sugar substitute is an option if you are avoiding sugar). If you want it more hot, add more ground pepper as well as sprinkle 1/2 teaspoon more of the sugar. Stir well, transfer to a serving plate and keep warm.

Green Asparagus

I had 1/2 kilos of the green asparagus, they were steamed. To maintain it´s green vivid color, add it to a casserole with a bit of water + ice cubes, so that it gets a shock and maintain its green color. In a pan with 2 tablespoon olive oil, stir fry the asparagus and sprinkle 1 teaspoon soy sauce, stir carefully and season with a bit salt and pepper. Arrange in a platter, sprinkle with ground Grana Padano and serve this hot together with the cabbage and pasta as the main dish.
