INTRODUCTION

Hello, beautiful chefs of Steem food🥰.

You're welcome to the second Delight of my Special Recipe Series. Trust we are all doing awesome?

For this Delight ☺️2️⃣, I can't wait to share an exciting recipe of my favourite meal 🥰. If you miss my Delight I, click here to see it.

My favourite meal is Beans & Plantain . And I have three recipes for enjoying this meal. Today, I will share one of them with you.

This particular recipe makes a very delicious dish. Cooking the very ripe plantain together with the beans releases a unique sweetness. It is also a completely healthy method: boiling. And highly nutritious. To achieve this sweetness is to use very ripe plantain.

This recipe is very simple and easy to make. The Preparation is also short and easy.


INGREDIENTS

For this recipe, we need:

  • Beans 2 cups
  • Very ripe plantain (I used 5 medium sized)
  • Smoked fish
  • Crayfish
  • Scotch bonnet Pepper (6 -8, you can use pepper powder if preferred)
  • Onion -1 bulb
  • Seasoning cube -1
  • Palm oil
  • Salt to taste
  • Boiled egg for garnishing (optional)

PS: you can add more proteins like prawns, chicken chunks, beef chunks, liver cubes as you desire.


PREPARATION

  • Parboil the beans
  • Blitz the pepper.
  • Dice the onions
  • Rinse crayfish,set aside. Rinse smoked fish,
    fillet and divide into chunks.
  • Peel plantain, cut into medium sizes and set aside

I forgot to take the picture when I cut the plantain, but not too worry, it just to cut into medium round slices.


COOKING

Let's begin the cooking!

  • To the parboiled beans, add the diced onions and set on heat.

  • Allow to cook till semi-soft. Add the plantain slices and pepper.

  • Leave to cook for about 10 minutes. Begin to break the plantain with a wooden spatula till it is mixed up with the already soft beans

  • Next add the fish, crayfish, seasoning, palm oil and salt to taste. Mix together with a spatula.

  • Cover and leave to cook for another 7-8 minutes. Turn again with a spatula. This is where you check and balance the taste. If need for salt, you add and leave to steam before removing from heat.

  • You should have a moist bright reddish beans & plantain

CONCLUSION

Beans cooked with very ripe plantain is a healthy proteinous dish full of nourishment. So delicious 😋😋. I enjoy it a lot. I can eat it many times in a day. The taste is simply amazing.
