"You'll never know the history of a place unless you taste their dishes"

     Etag or salted meat from a tribe in the Mountain Province, Philippines called IGOROT is one of their special dish that they serve to their tourist. this etag is one of the ancient ways of preserving their food by adding salt to the pork and putting it in a "gusi" (clay jar) until such time and cook it. 

     Some place called Sagada have their own version called Smoked Etag, only the process of preserving the pork is the difference, after adding salt, the dried to the sun or using smoke from burnt firewood to help the meat to stay longer for a period of time.
