Vegan Chickpea Cookie Dough - You don't have to feel Guilty anymore for just wanting the dough :)

Vegan Chickpea Cookie Dough - A healthy and eggless no bake cookie filled with protein and Fiber!

I love chickpeas. I don’t have that many recipes that call for chickpeas so when I found a healthy and eggless no bake cookie recipe, filled with protein, fiber and chickpeas as the main ingredient, I couldn’t wait to try it. I love cookie dough too so Vegan Chickpea Cookie Dough sounded perfect and you can just toss all the ingredients in blender or food processor and you have a treat in 5 minutes.

Gluten free, Refined Sugar Free and Dairy Free. Can you believe it?

Ingredients:
1 can of chickpeas, drain and rinse them
½ cup of peanut butter
2 tsp of vanilla extract (make your own, see a previous post of mine)
2 ½ Tbsp maple syrup
½ tsp cinnamon
1 Tbsp ground chia seeds (use coffee bean grinder or mortar and pestle)
⅓ cup 60% cacao chocolate chips

Instructions:
Place the rinsed chickpeas in a paper towel to dry off. I rubbed them around in the paper towel to loosen the skins. Remove any of the skins you see that are falling off and discard. You do not have to remove all the skins but removing just some of them will help make the consistency more smooth, otherwise it can be a tad gritty.

Add the chickpeas, peanut butter, vanilla extract, maple syrup and cinnamon to your blender or food processor. Blend until creamy and smooth.

Next drop in the ground chia seeds and mix.
Add the cookie dough mixture to a bowl and fold in the chocolate chips.

This is ready to be served immediately. You can roll it in balls for energy bites or just dip a spoon in when you want a bite. Keep any leftovers covered and in the fridge for up to 4 days. This really does help satisfy my sweet tooth (most of the time).

Save the drained chickpea juice and freeze. It is called Aquafaba. You can use it as an egg white substitute and it makes a heavenly chocolate mousse. I will post that recipe one day :)

You could spread the cookie dough in a pan and make small bars too. This is very rich, so hopefully a little goes a long way for you.

I hope to try adding this cookie dough to home made ice cream this summer.

This is as good as real cookie dough said No One Ever, but they are so good they might help curb your cravings.

I am going to experiment with rolling dough balls in grated coconut next time.

Yummy, maybe add walnuts or pecans? Possibilities are endless!
