Veganwednesday - Feast for Lunch
We had one my hubbies best friend for lunch on my day off. In the morning they were downtown for a coffee and a proper talk amongst men. Because the hubby told me soon enough they both would be there for lunch I tried to make it a vegan feast - not at least to impress the friend and to make him say he wouldn't miss anything ... 😜
A couple of days before I discovered this cute little striped pumkin or squash. I don't know its name but it called mine and I needed to buy him urgently ... Some other ingredients I had were champignons, a zucchini, garlic, black olives, a hokaido-cashew-spread and a fetalike fermented and seasoned with mediterranean herbs called Feto. I had enough stuff to feed two grown men and myself ...
I cut the pumpkin into halves, removed the seeds, springled with sea salt, chopped garlic and rosemary and baked in the preheated oven until the flesh of the pumpkin was nice and soft.
The filling for the pumpkin were finely cubes of champignons and zucchini, slices of olive, pumpkin seeds, my hokaido-pumpkin-spread and salt and pepper.
I filled the pumpkin halves and baked them in the oven until nice and golden.
I cut the feto in thin slices and fried them until crispy and golden brown. I also had some oyster mushrooms in my fridge which I fried after the tofu feto.
I served the stuffed pumpkins, the fried oyster mushrooms and the crispy tofu with a fresh and colorful mixed salad.
The fried oyster mushrooms seasoned with smoked salt are the perfect topping for our colorful salad
We also had pickled balsamico onions, pickled peppers, and grissinis with the salad and the pumpkin. The green stuff in the middle is salicornia (or glasswort), which we discovered for us this year. It's fresh and crispy and salty and we eat it on bread or in salads.
My hubbies friend is a very nice, thoughtful and polite man. He said, he liked my meal a lot. He is polite but honest too. So I think he really liked it ... 😋

Oh my goodness!!! You really made me hngry now!!! I love cooking and preparing meals, that's ma passion, but sometimes it would be awesome to have someone to cook for me... I guess I'm going out for dinner today, to a nice vegan restaurant, so I don't need to think about what I should prepare, I will go on my own, I will relax and eat something healthy and delicious :)
And by the way, I'll definitely make this recipe soon!!!
