Mexican Vegan burger-Day 2 [Week One of Six Week Health]

Hello dear healthy food community, it is a pleasure for me to participate in this contest that fills us with creativity to prepare those nutritious and healthy foods that keep us healthy, thanks @healthsquared for the initiative.
For me, vegan burgers have become an essential dish. I usually cook them very often, since it is a very easy and convenient way to eat a large amount of vegetables almost without realizing it.

My entry is with the recipe: burgers



INGREDIENTS
200 gr. of black beans or cooked beans
1 red pepper
½ onion
Bread crumbs
1 can of whole peeled tomatoes
20 fresh coriander leaves
1 c.p. of oregano
½ c.s. of brown sugar
1 small garlic
1 cayenne pepper
2 jalapeños or hot peppers
Cheddar vegan cheese sliced
Salt
Note: the bread can be white or beet.



PREPARATION

1.-Cut the red pepper and onion into small pieces. Heat a little oil in a pan and begin to sauté the pepper. When it starts to be somewhat soft, add half the onion and a little salt. We leave the kitchen until both ingredients are well fried.

2.-We clean cooked chickpeas (if they are packaged) and let them drain. We add the sofrito. Chafamos with the help of a fork and add bread crumbs until a consistent mixture. We form balls of 100gr. that then we'll burn to give them the shape of a hamburger.

3.-To prepare the sauce, we heat a little oil in a small saucepan. When it is hot, add the tomatoes (including the liquid), the sugar, the very chopped cayenne pepper, the chopped garlic, what remains of the onion cut into small pieces, the oregano, the cilantro and a little salt. Let it simmer until the room is reduced and lose almost all the liquid. When ready, we will crush the tomatoes a little in the same pan.
4.-Introduce the foot of the crusher, at minimum speed, three or four times, just enough so that the tomato is cut into small pieces and a lumpy sauce remains.

5.-We prepare our burgers in the pan with very little oil, just enough so they do not stick (you can take what is left of preparing the sauce). Before removing them from the fire, we will put a slice of cheese on top to make them melt. To serve our hamburgers in the bread, we will accompany them with a little sauce and jalapeños cut into slices.
