Let's Make Some Spicy Vegan Food

Hello Steemians,
As I told in my profile that I am a part-time cook. I like to eat all kind of foods, mostly vegan foods. There is a reason for that. I was born in Bangladesh where we eat meat twice in a month mostly. So, I got used to eating vegan foods. I often hear people saying that vegan food is not tasty or something like that but for me, vegan food is tastier and especially I feel good after eating foods filled with vegetables. What makes someone a good cook? I would say imagination and experience. My mother always says, "there is not straight cut way or rules or bookish knowledge which can teach you how to cook, you have to feel the taste of the food before you even cook." I have seen her throwing the spices without any kind of measurement and in the end, it becomes amazing. I have cooked by the book a lot of time but it never became as good as her. So, for all my vegan friends out there, I am making this recipe. So, let us begin.

Ingredients

Two chopped onion
Sliced garlic
1 teaspoon Coriander powder
half teaspoon Turmeric powder
1 teaspoon Cumin powder
1 teaspoon chili powder
Salt to taste
3 tablespoon olive oil
sliced ginger
1 chopped spring onion.
1 chopped green chili
50 grams lentils
1 eggplant
cauliflower, broccoli, and carrot mix
curry powder

Process


Lets put 250 grams of rice in a pan and lets put lentils in it. Now, lets cut the chili, garlic, ginger, spring onion. Lets put them one after another and finally add the chili powder, turmeric powder, curry powder and add some oil. Now, lets mix them very well, put some water so that everything is covered with water. Lets put the lid and cook for 20 to 30 mins until its finished.

Here is a gif, so that you can see the whole process at once. I call it Khicuri in my language that means something without any rule. You can put any vegetables instead of what i used.

Now, lets cook eggplants. Firstly, we cut the egg plant in circular way. In a pot we put the spices, add somewater and then to put those eggplants. In this way we mix the spices with the eggplant. Now, we fry them in oil and don't forget to turn them around.

Now, we put them aside. Let us fry some ginger and garlic, then add spring onion and onion and fry them until they become brown. Now let us add some chili powder, turmeric poder and salt. Let's add some water as well and cook until the sauce become thick. Once its thick, add those fried eggplants and cook it for two miutes in low flame and mix all the sauce with the eggplant.
