Vegan cheeze recipes for cheese addicts

Vegan sliceable cashew cheese


Ingredients:

  • 1/2 cup of cashews (soaked in water overnight or at least for one hour) I replaced a part of the water with Brottrunk (a probiotic beverage similar to bread kvass)
  • two Tbsp nutritional yeast (for the cheesy flavor)
  • one glove garlic
  • 1.5 tsp. starch of your choice (guar flour, tapioca, cornstarch)
  • 1.5 tsp. agar agar powder
  • 1 Tbsp. lemon juice
  • water
  • salt to taste
  • 1/2 tsp. tumeric for the color 



Mix agar agar with 1/2 cup water in a saucepan. Keep aside. Prepare two or three ramekins by brushing the inside with oil. I reused plastic bowls from a veggie spread that I like and buy often.

Decant the water from cashews and rinse them with fresh water. Put cashews into a food processor together with nutritional yeast, garlic, starch, salt, lemon juice, salt and 1/2 cup of water. Make a very very smooth paste.

Add the cashew paste to the saucepan with the agar agar mixture.

Bring this to boil on a low-medium heat until it forms a thick pancake-batter consistency.

Quickly transfer to ramekins or your other forms.

Refrigerate for two hours. Carefully remove from the ramekin. You can eat it that way. It is sliceable, grateble though not as hard as common cheeses.



I made two cheezes from this quantity. I covered the first one with fresh ground pepper and the second with fresh ground pink pepper, papaya pepper and sumac (an arabic fruity and sourly tasting spice). You can use any fresh herb of your choice, nuts or granberries to decorate and to add more taste.

Spreadable pumpkin seed cheeze

Ingredients:

  • 1/2 cup pumpkin seeds (soaked in water overnight or at least for one hour) I replaced a part of the water with Brottrunk again)
  • two Tbsp nutritional yeast
  • one glove garlic
  • 1.5 tsp. starch of your choice (guar flour, tapioca, cornstarch)
  • 1 Tbsp. lemon juice
  • salt to taste


The preparation is even easier this time. Decant the water from seeds and rinse them with fresh water. Put pumpkin seeds into the food processor together with nutritional yeast, garlic, starch, salt, lemon juice, salt and 1/2 cup of water. Make a paste as smooth as you like. Try and mix again if you want it smoother.

Put in a small bowl or in a glass container with a lid and keep cool in the fridge. I like it on bread, with potatoes or as a quick pasta sauce.

Vegan parmesan 


Ingredients: 

  • 1 cup of raw cashews 
  • 2 Tbsp nutritional yeast 
  • 1/2 tsp salt
  • some freshly ground pepper 
  • a bit dried garlic if you like



Put everything in a food processor and blend until the cashews are finely ground. That's it! Enjoy on pasta, pizza or salads!

Wow! I had no idea theres so many vegan cheese options! Amazing! I am not vegan but Im trying to make better choices when it comes to food so I guess I`ll have to try some of these recipes! :)
