Vegan Couscous Burritos 🌯🌮✨

Hi Steemit fam! Today I'm coming at you with a burrito recipe. Burritos are so easy to make and that's why they are one of my go to lunches. This one is a bit different than usual ones. I would usually use rice but today I used couscous instead and it tasted phenomenal! It's a nice switch to a normal burrito recipe. It changes the taste just a little while still maintaining that burrito feeling.

I spiced this one up with adding tofu. Always feel free to add or take out any of the ingredients. How good your burrito will taste, depends on how creative you’ll be. You don’t always have to follow a specific recipe. Just take one as a base and then build around it, be creative. That’s what cooking is all about – being creative. Be yourself and express yourself not someone else. Food can always be a way of expressing yourself, let it be this way.

Ingredients:

• 40 g couscous
• 100 g tofu
• 150 g beans
• ½ bell pepper
• 1 onion
• tortillas
• ketchup

Method:

1. Pan fry onion, tofu and pepper until looks done.
2. Cook couscous.
3. Serve on a tortilla, drown in ketchup and roll into a burrito (be careful not to fill it too much otherwise it’ll be hard to roll)
4. You can at this point either eat it as it is or put it on a pan, flip it around and it’ll be crispy on the outside.
