Making Vegan Mayonnaise
This Delicious, completely vegan mayonnaise is thick and creamy and will genuinely make you never want shop bought mayo of any kind again! It makes use of the very hip wonder ingredient that is aquafaba (for those of you not familiar with aquafaba this is the name given to the strained water from a can of chick peas)
Ingredients:
250ml vegetable oil
2 table spoons of dijon mustard
1 tablespoon of apple cider vinegar ( I believe any vinegar will work but i like apple cider)
4 Tablespoons of Aquafaba (water from cooked chick peas can)
salt and ground pepper to season. A half teaspoon of granulated sugar (optional)
Method couldn't be easier
Place all the ingredients into a tall sided, dry beaker or mixing jug suitable for use with an immersion blender.
The container should be such that the immersion blender head is well submerged into the oil.
Start blending, it should take about 10 seconds. Try and make sure that there is no split oil once finished.
Taste and season at the end. If it is too acidic for your tastes then add some sugar. Mix well. Eat!
This will keep in the fridge for a good week or so.
