King Julian my best vegan kale and spinach recipe
Strangely enough it tastes like chorizo macaroni and cheese, and if you like me and hate kale, this 1 is for you. OK, you may be wondering about the name, it sounds like a Madagascar character. My mother came to visit me and tried to impress my family and I with a Vegan meal, and this is it. When I asked her to show me how to make it she told me to Julian slice the sweet potato, which I thought was a bit funny so I called it king Julian.
First thing is to soak the cashews, about 330g in boiling water and 6 garlic cloves, just pour boiling water over the cashews till they just covered.
This meal doesn't take long to cook so you can start cooking rice or pasta, I used rice to keep it a little healthier.
Take about 250g chickpeas and fry till a little brown
So you need two onions and a hole red pepper.
Chop
Once the chickpeas are brown, throw in the onions
Mix and chuck in red pepper
Grab yourself a sweet potato
Peel and grate
Then I Take two heaped teaspoons of bullion powder
Mix it with 500ml water and pour into pan
Then two teaspoons ground coriander
One teaspoon smoked paprika
Then and another 400ml of water and heat till simmering
The sweet potato has to cook until it is soft because it is going to make the sauce, so about 10 to 15 minutes. While that is cooking cooking you can prepare the kale about 200g, I used black kale.
The stems are the worst bits, so they go. I just wash the kale and carefully cut out the stems like so.
Then I chop it this way and that, and pow
I know that it looks like a lot but it cooks away.
Then add 250g washed spinach
Yet again, I know it looks like loads, but it is not.
Let that cook for 5 minutes. While it is cooking blend the cashews, add 30g nutritional yeast flakes.
Blend and pour in pan
Mix and kazam
Dish up and skof down
Give it a shot, it's awesome.
Great job remaking your moms dish! It really looks like a winner to me. I don’t even know how to julienne anything… I’ve definitely seen it in recipes but figure they mean chop 🤷🏼♀️ Haha… great job again @gguy773 this dish sure would impress at my house. Props to your mom :)
Thanks, I was impressed she made something without meat, being South African she eats a lot of meat. I also liked your pudding post, have you heard of cook sisters, it is also a popular South African sweet treat, and they are awesome.
No… tell me more… cool sisters huh?!? I may have to look it up and see if I can veganize it. 🤔 We love sweets in my house.
I don't think it would be that difficult to veganize, I'm not to sure on how to make them. They taste like crispy donuts soaked in syrup.
Yum… those only look delicious. It reminds me of a traditional Greek dessert soaked in honey. Maybe I’ll try these sometime :)
