15 minute Couscous jam packed with flavor and fresh salad! 😀

About me and this dish!
I’m not currently vegan. Hang in there though as I’m a work in progress 😁, I am however a badass vegetarian that grows my own fruit and veg in an organic and sustainable manner. w
So please bear with me while I try to cut out eggs and cheese from my diet haha
This was great fun though and gave me a bit of a nudge to get back on top of my passion for photography so thank you so much for helping to facilitate that!
A Favorite of mine
A good Couscous is one of my all time favourite meals, I find it so versatile as a main dish, side or to take to work for my lunch!!.
It's fairly quick to make in that it's just a case of washing, peeling and cutting the vegetables and getting them all in a wok (or pan) and cooking them to the consistency you like.
It’s all about the veg!
Some people complain of couscous been boring bland and tasteless and i completely disagree. It is all in the ingredients you use! Fresh veg really makes the flavours pop and some strong flavoursome herbs can bring out a whole new dimension.
My favourites to add are
Chilli
Garlic
Black pepper
Fresh oregano, basils etc
How I make the perfect couscous is to measure out equal parts water to equal parts couscous - (one cup water, One cup couscous for example) bring the water to the boil with the vegetables and mix in the couscous and herbs and cover for 5 minutes
One thing I often do is use a fork a few minutes in to break it up and make it fluffy then let it absorb the last of the water as this helps to avoid a congealed block of couscous at the bottom of the pan.
Then the last thing i did was stir in a nice big bunch of fresh salad (baby spinach and mixed salad) fresh from the garden

When i make this next im going to ditching those Vegan Quorn pieces, their more for the rest of the family that are omnivores but the packaging and the processing doesn't fit well with my long term goals for this journey..
So i’ll be sharing my experiments on that with you all in the future
If you don’t have cous cous in you pantry think about getting it or something similar like quinoa if your gluten free etc as its super quick tasty and cheap to make!

Hell ya you are! LOVE it and thank you for entering #veganwednesday, I have a strong affinity for home grown veg so I am loving your style! I also homestead and try my best to grow whatever I can though am just about to move unexpectedly this weekend before peak growing season!
