....Red Lentil Soup
It even won over my friend who said he's too lazy in the kitchen to be a vegan
Organic red lentils require no pre-soaking and are ready in under 5 minutes
Rinse them and put them in boiling water add a sprinkling of herbs, natural salt and olive oil
Meanwhile chop some quick cook vegetables
I used Mushrooms, pepper and kale. You can use whatever combination you like
Add vegetables to the lentils
Wait 3 - 5 minutes until the lentils are soft
The longer they cook the more mushy the soup becomes, like dal rather than a broth soup
You choose which style you prefer
Eat with bread, or on its own
Save some in the pot for later, its even better reheated the second time ; )

Hi celestialcow, I liked your recipe. I'm often eating a similar recipe, that I cook based on the Traditional Chinese Diet. I especially add garlic, cumin, saffron, lemon juice and ground almonds to cover the five elements.
Kool. Yes add all the spices you want. I adjust this recipe depending what I have around, or freshly squeeze lemon juice also nice. Saffron I save for special occasions because of the high price.
I got a sweet potato to cook with red lentils and onion for an easy soup tonight, too! I am always a fan of simple quick meals for days when you don't have the time or energy to do something elaborate!
