Blueberry Blondie
I developed this recipe because of my love of baked goods. It's sugar and fat free, and full of fiber.
I cook the beans from scratch I think they taste better than the canned ones. But I have used canned plenty of times when I am short on time.
For this recipe I use great northern beans. I cook a big batch then freeze the right portions I need for this recipe. Makes the whole process much faster.
I use a whole 12oz pack of dates. This can be expensive but they are two for the price of one every few months at the store where I shop in Florida so I stock up at this time. I buy the ones with the seeds removed.
I also use almond butter as my daughter has a peanut allergy. Peanut butter would be fine.
Stocking up on dates when they are on sale.
Dates in a small saucepan just covered by water.
1 1/2 cup frozen packs of great northern beans
Dates, beans, almond butter, vanilla, and arrowroot powder pureed for several minutes until smooth and creamy.
Combine flour, baking powder, and salt in a medium bowl.
Combine the puree mixture and the flour mixture.
Add the blueberries and mix gently.
8 inch square pan lined with baking paper.
Cooked after about 50 minutes at 350 degrees.
Tasty and filling.
Ingredients
- 1 and 1/2 cups of cooked great north beans or 1 can drained and rinsed beans.
- 12 oz packet of pitted medjool dates.
- 1/2 cup of creamy almond butter.
- 1 tsp of vanilla extract.
- 1/2 a cup of whole wheat flour.
- 1/2 a tsp of double acting baking powder
- 1/4 of a tsp of salt.
- 1 punnet of blueberries
- Put the dates in a small saucepan and cover with water. Cook gently for about 10 minutes until soft. Drain most of the water just leave a little.
- Combine the beans, dates, almond butter, and arrowroot powder in a food processor until smooth and creamy.
- In a bowl combine the flour, baking powder, and salt.
- Add the puree mixture to the flour mixture and combine.
- Add the blueberries to the mixture and gently mix.
- Spoon the batter into an 8 inch square baking dish lined with baking paper.
- Cook at 350 degrees until brown about 50 minutes.
- Slice into 9 bars.
