Ulog No. 54: "Ginataang Kalabasa at Sitaw (Pumpkin and Green Beans in Coconut Cream)"

Ginataan with Pumpkin and Green Beans is a Filipino specialty dish which makes use of coconut cream or milk, pumpkin and green beans or string beans. This recipe has many versions because it can be cooked with different types of meat, such as diced pork or chicken, prawns, lobster or crab meats, smoked fish, pork crackles, and minced meat (beef or pork).

When I cook this recipe, I always use minced pork or beef or prawns, that is, if my husband is doing "nativity fasting" or "lent fasting", which means he won't eat any meat at all.

I really love this dish because its sauce is creamy and flavourful and absolutely perfect with rice. However, because I am conscious of my food consumption nowadays, I only eat 1 cup of rice. But with this dish, sometimes I can't resist not having more than a cup of rice. It's just really more-ish.

How to Cook Pumpkin and Green Beans in Coconut Cream

Ingredients:
minced or ground beef/pork
3 cloves garlic, crushed
1 brown onion, sliced
kent or butternut pumkin, diced
3 cups green beans, cut into 3 inches long
400 ml coconut cream
2 cups water
salt and pepper
2 tsps curry powder
2 tbsps shrimp paste
3 tbsps fish sauce

Prepare all the ingredients. =====>


1. Heat oil in a casserole pot.
2. Add garlic and onion and saute until onions are transparent.

3. Add minced meat.
4. Add salt, pepper and shrimp paste.
5. Add fish sauce.
6. Add curry powder.
7. Stir and cook until minced meat is brown.

8. Add the pumpkin and pour in water. Bring to boil until pumpkin is soft.

9. Add the green beans and coconut milk. Simmer for 10 minutes. Taste the sauce and as needed, add salt and pepper to your desired taste.
