Ulog 17: National Prepping Month- September: Preserving The Harvest- Crushed Tomatoes

As part of my month long series for National Prepping Month I will be sharing a variety of survival, prepping, storage ideas and more. Today I will kick-off the series with my canning/preserving crushed tomatoes recipe. It is one that I have used for years and simple for the beginner canner or prepper.
Since I had already planned on making the crushed tomatoes today, it seemed to be the best place to start.
Crushed Tomatoes Recipe
- For every quart making, you need 3-lbs of tomatoes
- In each quart jar (1/2 teaspoon citric acid or bottled lemon juice- DO NOT use fresh squeezed as you CANNOT properly judge or control the amount of acid) and 1-teaspoon of salt) I used kosher salt. For every pint jar use 1/4 teaspoon citric acid and 1/2 teaspoon of salt.
- Place salt and citric acid in the bottom of jar. Pour (carefully) the prepared crushed tomatoes into jars using a large ladle and funnel.
- Process in water canning bath as follows: 45 minutes for quarts and 35 minutes for pints.
- Plus your clean and sterilized jars. I used pint size for this recipe and ended up with 12-pints and 3-quarts (from 30-lbs of tomatoes)

I decided to make a large match of crushed tomatoes versus pasta and marinara sauce, chili sauce and salsa this time because crushed tomatoes are extremely versatile. They can be used for any of the above mentioned recipes.
I like to keep cans of preserved crushed tomatoes on hand for making pasta sauce, a pot of chili, goulash, stews and even homemade tomato soup.
List Of Basic Canning Supplies Needed For Making Crushed Tomatoes
- Water bath canner
- Pressure canner (I will be buying one this season)
- Various sized (approved) jars, new seals and new/used rings
- Canning essential kit including the lid lifter, the jar lifter, jar wrench, bubble popper, tongs and funnel
- Citric acid
- Measuring spoons
- Scale
- Cooking pot
- Large ladle
- Extra towels
- Timer
