Fermented Hatch Chile Hot Sauce

We've been having fun fermenting different foods on the road so I decided to get the ingredients today to make some hot sauce. The grocery store had New Mexico Hatch green chilies which seem to be really popular in Colorado. They were a good price so we decided to make this our base.

I'll share my recipe below and we'll hope it comes out ok! This will be a MILD hot sauce, if you like more heat add a couple habanero peppers in as well.

6 hatch chiles
5 carrots
1 large onion
4 garlic cloves
1 cup apple cider vinegar
1 tbsp turmeric AND ginger (optional)
1 tsp salt, or to taste

Begin by chopping carrots and placing in a small pot. Pour water into pot when done chopping carrots and fill to barely cover carrots. Bring water to boil for 10 minutes, then rest. You can start chopping the other veggies while the water is boiling.

Assuming you chopped those other veggies while the water was boiling, you can add them to a large skillet. Add the peppers, onion, garlic, ginger, turmeric, and salt into the skillet. Also add about 1 tbsp water or ACV to help prevent veggies from sticking. Cover with lid and cook on low for about 10-15 minutes or until tender.

Once all your veggies (and boiled carrots) are tender, you can combine them in the skillet or another bowl.

Now if you have a blender you can combine everything in there and blend until smooth. Since we are without electricity and I'm pretty sure I gave away my blender anyway we are using a mortar and pestle. This is going to take some time especially if you don't have a large mortar..

Alright so assuming you have everything blended up, wait until it cools to room temperature and then add the apple cider vinegar in and mix well. Next strain any large chunks remaining out and remash or blend and add back into the mix. Taste at this point to know if it needs more salt.

Now it should be ready to transfer into a fermentation vessel. For hot sauce I like to use the ones that look like beer bottle with clamp lids. Pour in hot sauce to bottles and let set for 1-2 weeks and it should be ready to try.
