Ever tried a Sugar cane juice before?
Walking around Vigan, we saw these throng of people around this tiny corner along Calle Crisologo with a pile of sugar cane on the side. I never have sugar cane juice before, as a child, it's not usually made like this as there's no juicer machine available.
Teeth like Dracula
The norm was to go in the farm at the back of the school or to any farm in the vicinity, break a stalk, remove the hardened skin, chew a piece then suck the juice. Kids do have draculean teeth those days! And the left-over we take home and clean-up using a knife.
The Juicer
See what's left of the sugar cane? Horses must have sweet tooth as apparently, they love them. Well, whatever is left as they can repeat the process to squeeze more juice from it.
Squeezed KALAMANSI juice was added, about 4-5 pieces was added to lessen the sweetness. This is the Philippine version of a lemon. Next time, i will add more kalamansi as it's very sweet.

Sugar cane Plantations
Unprocessed sugar at its' best!
The Ilocos Province have loads of it, though our town doesn't grow them. Another town where we were living before where my parents taught was, so in season, all we saw were sugar cane everywhere.
Has anyone ever done a sugar candy before with their bare hands?

they're tropical. there are many varieties too according to the color of the stalk, size.

I grew up in the Virgin Islands, and they used to grow sugar cane there when I was a kid... and so I know what it's like to chew that woody stuff... ;) But I don't think I ever had the raw juice squeezed out of it! Interesting, I would like to try that sometime! :) 😄😇😄
yeah and stepping at the root to break it! it's only now that i've seen that machine, its very basic so am sure there are modern for sure.
