Look ma, I'm eating my veggies!

People often get the wrong impression about me... I don't JUST eat meat.

Yes, I'm opposed to salads... but that's because I don't enjoy the taste of most salad dressings... but the veggies (or "leaves" as I sometimes jokingly refer to them)... those I actually have no problem with.

In this recipe, we take Aubergine's slice them "relatively" thin, and grill them with some olive oil, salt & cumin.

The "veggie mix" is mostly spicy fried onion mixed into couscous, and julienned raw veg (beets and carrots in this case) and freshly minced garlic and some freshly chopped coriander.

Of course it's not really a braai unless there's meat as well... so a lekker rump steak cut into slices finishes off the filling.

Once the Aubergines are have been grilled, fill them with the mix, roll 'em up and chow down!

Couldn't be easier!!! \m/

P.S. I'm thinking next time I'll spread some pureed peppers before adding the mix and that might add an interesting contrast to the "dry" couscous (or I just need to learn to make couscous so that it's not dry... is that possible?) :P
