 The joke is playing on the different types of blood cells found in humans.

Red blood cells transport oxygen and give blood its red colour. Over time, we evolved so that red blood cells don't contain a nucleus (the part of the cell that holds DNA), to give maximum space for oxygen-carrying proteins. In essence, it gave up it's nucleus (DNA), so that it could better do its job (transporting oxygen).

White blood cells (also called leukocytes) handle the body's immune system. They identify and kill bacteria and viruses that invade the body. An overactive immune system sometimes starts to view harmless material as a threat, and the overwhelming reaction in response to this "threat" can be uncomfortable or even dangerous. In people with peanut allergies, the immune system reacts to the chemicals of the peanut as a pathological invader - the immune response is so drastic that it can overwhelm other body systems.
