甜白酒
一說到酒,大家都會認為是先生們常喝的各種酒。而我要講的酒,它的名字叫甜白酒。甜白酒雖名為“酒”,實則不是酒。
甜白酒是以大米、玉米、粟等糧食作物為原料,用清水浸泡或者煮熟,再蒸透後,控在不滲水的盆、罐、桶等盛容具中,待其涼透,撒上甜酒麴,淋少許涼水,攪拌均勻,放置在溫暖乾燥處。夏季,l-2天即可成甜白酒;冬天,約需3-5天即可成甜白酒。
甜白酒具有很高的營養價值。在大理其間學會了吃甜白酒煮雞蛋。非常滋養身體,有助身體恢復元氣。每隔幾日,就在市場上買上二斤甜白酒,回來煮雞蛋吃吃。
吃的時候連米帶酒一起吃,在煮的時候放入雞蛋就是香甜美味的甜白酒煮雞蛋了,煮好的時候再加些紅糖、蜂蜜或冰糖之類的,甜甜的。吃起來又香又甜,令人寒意頓消。由於酒精度過低,一般是不會把人吃醉的。
甜白酒對人體好處多多,具有溫中益氣,補氣養顏,或平素體質虛弱,頭目眩暈,面色萎黃,少氣乏力等等,對身體健康幫助非常大。
