Peach Pie: Cooking with Crypticat
Who can honestly say they don't like peach pie?
Peach pie never seems to last very long, it literally flies off the shelf. Today on Cooking with Crypticat, I'll explain how to prepare a peach pie. It isn't the easiest pie to make and it's not something we do often, peach pie is an exceptional treat!
There are different ways you can make a peach pie, you can really bake it into a syrup or you can undercook it a little with less ripe peaches and still taste and feel the integrity of the fruit, I've done it both ways and will leave it up to personal preferences -it's still going to be delicious. Below is the more fruity way so don't use the ripest peaches you can find, it's even more difficult to prepare it this way as the skin doesn't easily come off the peaches.
The following recipe is for a standard 9" (23cm) pie
Ingredients
6 cups of sliced peaches
Pastry for a double crust pie
1 cup of sugar with a little extra for reserve
1/2 cup of all-purpose flour
2 table spoons of butter
1/2 teaspoon of cinnamon
Directions
Preheat the oven to 425F or 220C (It's standard to list this first, but you may want to wait as filling the pie takes time)
Remove the skin from the peaches, you can blanch them to make it easier; boil the peaches for 15 seconds and then place them in cool water before attempting to peel them
slice the peaches and combine them with flour, sugar, and cinnamon in a bowl
roll out the pastry, this isn't easy and usually requires extra flour so it doesn't stick
line the bottom of a pie pan with the pastry
put the peach mixture into the pastry-lined pan and place chunks of butter on top of it
cover the top with strips of pastry in a criss-cross pattern, this isn't necessary as you can just put a full pastry on top and cut slits in it
sprinkle sugar on it, you can also dust it with milk before but this isn't required and just adds a little shimmer
bake it for 35-40 minutes at 425F (220C) taking it out when the crust is brown, you may want to cook the pie on a baking sheet so it doesn't boil over and make a mess of your oven
let it cool and enjoy

Peach pie is the best, you can even make it from canned or frozen peaches. I owe my colleagues a lot more than a peach pie 😸
