Recipe of a delicious Eggplant Cartoccio with Pasta Penne in Napoli sauce.

Hello Steemers! Pay attention because today I bring you a delicious recipe that is very easy to make.

Cartoccio of Eggplant with Pasta Penne in Napoli sauce.

The ingredients we need for 4 dishes are:

  • 7 large eggplants.
  • 800 gr of ripe tomatoes.
  • 300 gr of Pecorino cheese.
  • 450 gr of Mozzarella cheese.
  • 1 Medium onion.
  • 500 gr of Pasta Penne.
  • 100 gr of wheat flour.
  • 200 gr of oil.
  • 2 cloves of Garlic.
  • Basil.
  • Salt.
  • Pepper.

When we have the complete ingredients, we start preparing the Napoli sauce.

Pre Warm a pan over medium heat with oil, when hot add a finely chopped clove of garlic, then add the chopped tomatoes in julienne, add the basil and let it cook over low heat for 20 min.

While the sauce is cooking, we should crush the tomatoes.

Now we are looking for a volunteer in the house to grate the cheese.

At the same time, we fill in our Cartoccios. Guess What is it?... Yes, eggplants.

We take 3 eggplants, we wash them, we peel them and we proceed to cut them in Brunoise, we do the same procedure with the onion.

When we have the aubergines cut, place in a pan over medium heat the onion and the remaining garlic clove.

Once the Onion is crystallized, add the Eggplant, season with salt and pepper to taste and cook for about 15 minutes or until the Eggplant is ready. When it is ready, let it rest.

When it is resting, add the chopped Mozzarella cheese in Brunoise, the flour and freshly grated Pecorino cheese. (add water if necessary.)

We look for the remaining aubergines, wash and chop into pieces of this thickness (3 cm approximately)

We take an iron, place oil and over medium heat we put the aubergines to cook.

We are looking for a tray to put the aubergines, add oil inside with a little sauce.

When they are cooked, fill and wrap.

We place in the tray, one next to the other in this order.

We add cheese.

We add part of the sauce to the middle of the tray.

Cover with foil and baked for 25 minutes at 200 ° C.

We take out the oven and cook the pasta.

We serve the Cartoccios with the pasta, more Napoli sauce, more freshly grated cheese and good profit!
