Steemit Sandwich Contest Week #26 ~ Meatball Subs

This is my entry for #steemitsandwichcontest by @jaybird. Thank you for the opportunity. I made meatball subs. You can use this recipe for ground turkey, chicken, beef or pork. I just so happen to have some ground turkey. These are definite comfort food! What is really nice is that you can make these meatballs ahead of time and freeze them (raw or cooked).

Turkey Meatballs:
1 pound ground turkey
1/2 cup panko crumbs mixed with 2 tbsp. milk
2 eggs
1/4 cup finely minced onions
1 tsp. Italian seasonings
1 tsp. oregano
1 tsp. garlic powder
1 tsp. onion powder
1 tbsp. Worcestershire sauce
1 tsbp. ketchup
1/4 cup fresh chopped parsley
1/4 tsp. salt
1/4 tsp. black pepper
*Mix above ingredients well. Refrigerate for 30 minutes before forming balls.

Form meatballs 1-2" diamter - about size of golfball. Place on baking sheet.
Bake at 400 degrees F for 15-20 minutes depending on the size of the balls.
Mine took 15 minutes.

Sauce:
1 large 28oz can tomato sauce
1 small finely diced onion
1/2 cup finely diced bell pepper
1 tbsp. tomato paste
1 tsp. minced garlic
1 tsp. Italian sesonings
1 tsp. oregano
1 tsp. basil
1/4 tsp. red pepper flakes - optional
pinch salt
pinch black pepper
extra virgin olive oil

In a pan on medium heat add oil, onions, bell peppers, salt and black pepper.
Cook and stir for 3-4 minutes.
Add tomato paste and minced garlic. Cook and stir for 1 minute.
Add tomato sauce and spices. Stir.
Add meatballs and turn down to a simmer. Stir to make sure meatballs are coated with sauce. Cover and cook for 15 minutes.

Hoagie or sub rolls
mozarrella or provolone cheese

Place slice cheese on roll, then meatballs, spoon over a little sauce, cover with slices of cheese.
Bake at 400 degrees F for 10 minutes or until the cheese is melted and bubbly.
