Steemit Sandwich Contest Week #1 - Cured egg yolk, Cucumber and Curcuma Mayo Open Sandwich
@progressivechef is back again to share with you all an amazing recipe that I just created this morning! It turned out to be really very delicious!
It is my entry for the first #steemitsandwichcontest organized by @jaybird!
Before discovering the recipe, I would like to thank @jaybird for having launched this amazing contest which I am sure will be a great success!
Cured egg yolk, Cucumber and Curcuma Mayo Open Sandwich
NAME :
Cured egg yolk, Cucumber and Curcuma Mayo Open Sandwich
INGREDIENTS :
Brown Bread
Cured egg yolk
Scrambled egg white
Curcuma Mayo
Cucumber slices
Caramelized onion
Onion rings
Beetroot confit
Watercress leaves
Tomato finely cut and seeds
Love & Passion - Most Important!!!
I really wanted to do something different from the usual stuffed sandwich that we are used to see everywhere!
With this sandwich I think I've given some sexy look and modernity to sandwiches!
Don't you think so!?

ADDITIONAL INFO :
The egg yolk is cured in sea salt and sugar for 12 hours, you can cure eggs yolk up to 1 month!
I made my own mayo with a dash of curcuma to give it a nice kick!
Spoiler Alert : It was the best sandwich I have ever tasted!!!
I will have to insert a 4th photo... And you will understand why by yourself!!!

ohh yes!!! I've wanted to try salt cured egg yolks because they look like an umami explosion! Love this bright and fresh open faced sandwich - looks amazing!!!

The whole cured egg yolk thing was a nice touch. Thanks for the explanation as i was wondering how you actually do that... How does it change the yolk.. in flavour or consistency?

Nice touch with the burnt paper lol. Next week be sure to snap at least one picture with the sign verifying the entry. (we got to see that it's been made specifically for that week in the future)

Well the taste of cured eggs are just unique! The texture varies depending how many hours or days you are curing them! I did it for only a couple of hours just for it to set as i wanted it to be still runny!

I've never heard of a cured egg yolk. How do you do that??

You should do it, it's amazingly good! My way of doing it, is use 75% coarse salt and 25% sugar , mixed together then add any herbs you prefer.
I use mostly lavender, thyme, rosemary.
Put some of this mixture in a bowl to make like a bed!
Then separate yolks from whites, and transfer yolks on this bed.
Carefully pour remaining mixture evenly over the yolks.
Wrap the bowl with plastic wrap and refrigerate until yolks are firm and dry throughout.
It can take 5 days to be firm and you can cure up to 30 days!
After the desired time, take out the yolk and brush the excess of salt mixture and rinse in clear water!
After that you can dry it further more in the oven and used on pasta by grating it over!
Lots of recipe you can do with it!
