And so it's Christmas Eve - a starry starry night here at home, the gifts are all packed, the roast's in the oven and the trifle all done!

While all this was happening, I still had one last sandwich to make before closing time. The son's girlfriend came down for a blitz visit last week and brought us a very special gift - a large trout caught on their recent breakaway.

Don't ask me about the beard, it's way too long - I do not like it ;) but that was a beaut of a trout!

So a Christmas eve sandwich has to have only the best ingredients and trout is really special so I'll be making a Starry Baked Trout & Wedges open Sandwich.
I've only eaten this fish in restaurants, never cooked it myself so went to granny Google for advice - I wanted the easiest method to cook this and not make a mess of it - a Lemon & Herb Baked Trout was my choice as I have Thyme, Rosemary & Parsley growing in my herb garden.

Placed on foil, seasoned, filled with lemon slices, garlic, herbs and lathered with Olive Oil and finally dotted with butter, then sealed and baked for around 35 min in a hot oven.

The flesh flaked off the bone beautifully so was cooked!

Open sandwich Ingredients

  • Half a Wholewheat roll
  • Tartar Sauce
  • Lettuce shredded
  • Baked Trout - deboned
  • Potato wedges
  • Parmesan Cheese
    First layer Tartar Sauce

    Followed by shredded Lettuce

    The star of the show makes an appearance - Deboned Trout

    Pipe tartar sauce in a star shape and add another star of Thyme on the outside, place sandwich in centre and top with wedges - fuzzy sign in background

    Finely grated Parmesan cheese on top

Love the trout sandwich with the tarttar sauce. Trout is 1 of my fav fish too! And baking it usually produces amazing results as long as u don’t over cook. Bbq is also fantastic! Watch out for flair ups tho!

Ya i think max like 15min in the oven should suffice I just keep checking it & when it starts to "flake" I know it's good to go!

Thanks for that tip @jaybird, granny Google also said 15-20 min but I was worried as it was a large fish so kept it in longer. Will remember next time:)

Ok I agree beards suit many guys but his beard is just too long! Had it trimmed when they got back from vacation;)
