What happened to 2018?
That's my lament and I'm sure that's how many of you feel; only nine days to Christmas and in a little over two weeks we're into 2019!
We're having a busy season in our airbnb with two lovely families; one with the cutest little twin baby boys so I have hardly had time to breathe the past couple of days hence no steeming since Thursday night!

My kitchen has been steeming though as we have to eat not so, takeouts come in handy but really we can't eat that every week so of course the good old stand-by, the sandwich, came to the rescue once again!

But the sandwich I made this week for @jaybird's Steemit Sandwich Contest Week #71 is an attempt at making a Smoked Snoek Christmas Star Wreath, keeping with the theme of Christmas.

We have a Christmas fairy here called @llfarms who's been sponsoring the contest, so a huge thank you to this lovely lady! Hope you've made that manwich/womanwich you promised her @jaybird ;)

My Star wreath was baked on a pizza stone - Bread dough, Parmesan cheese, Mozzarella Cheese, Red Onion, Spring Onions, Red & Yellow Peppers, Radishes, Smoked Snoek (a South African delicacy, smoked Pike) and fresh Coriander.

Ingredients

  • Bread Dough - flour, salt, yeast & lukewarm water
  • Parmesan cheese finely grated
  • Mozzarella Cheese
  • Red Onion diced
  • Spring Onions diced
  • Red & Yellow Sweet Peppers diced
  • Smoked Snoek deboned & flaked
  • Radishes sliced super thinly
  • Fresh Dania (Coriander)

Flaked smoked Snoek, absolutely delicious & distinctive flavour. This fierce predator of the ocean is known elsewhere as Pike and is popular in South African braais (BBQ). Although it has an oily skin, it needs constant basting as the flesh can dry out. Smoked Snoek is traditionally eaten with sweet potatoes and is delicious in patés, starters, quiches, pasta & salads.

Roll dough out to approx 5mm thick, cut a circle of approx 40cm diameter

Place on floured pizza stone, make a cross in the centre so you end up with 8 segments, then cut outer edges into 8 equal segments

Arrange filling on top, omitting the fish, radishes, dania & reserving some Parmesan

Fold outer edges to form the point of the star & fold inner edges in to make an inner circle - hope that makes sense ;)

Brush dough with an egg wash

Bake at 200C till crusty and golden brown, top with smoked Snoek, Radishes, Coriander & a dusting of Parmesan

Ah thank you my friend, I saw the idea in a local magazine but changed it a little, does not look half as good as theirs but still tasted great ;)
They cut a larger circle (40cm) and cut a small circle in the centre, I did not have such a large pan though. Will make this again so hopefully will look a little better next time.

Dam.... This looks incredible. Love the geometry of this piece lol and how it breaks apart into the individual wraps !

Smoked Snoek sounds like it's tasty, I personally love smoked trout or salmon so I'm assuming it's similar?

Great collection of ingredients like the fresh coriander and of course the home made bread!

Thank you so much @jaybird, I've edited my post to say a little more about the fish but yes, if you enjoy smoked trout & salmon you certainly will enjoy smoked snoek, it's quite similar but just more fishy :)

Snoek looks like a cross between crab and salmon, and I'm sure it doesn't taste like either. (Although either might go well on this sandwich -- which looks like a cross between a croissant and pizza. Very inventive. And I'm sure very delicious, too.)

One final thought -- traveling with twin infants. OMG!!!

My sentiments exactly when I saw the twins, plus they did not check with me beforehand, I have 2 campcots for the guests but they traveled with their own in the car as well!!! I was exhausted just seeing that!
