My entry for #steemitsandwichcontest 39- Springtime.

Springtime tortillas

Ingredients for tortillas:
3 cups of all-purpose flour
1/2 tablespoon of salt
1 cup of warm water
4 tablespoons of extra virgin olive oil

Combine the ingredients in a bowl and knead it until the dough is smooth. Divide dough into 10 small balls, cover it with a kitchen cloth and let it rest for 20 minutes. Flatten the balls with a rolling pin into 10-inch circle. Sprinkle with flour to prevent sticking. Preheat a large skillet and spray it with olive oil. Cook tortillas over medium heat for about half of a minute on each side.

Ingredients for filling:
300 g of chicken breast
1 onion
2 bay leaves
3 cloves of garlic
1/4 tablespoon of salt
150 g of boiled corn
100 g of boiled peas
200 g of boiled beans
3 scallions
1 red paprika
100 g of cherry tomatoes
300 g of lettuce
150 g of cottage cheese
150 g of yogurt
3 tablespoons of mayonnaise
100 g of half-fat cheese
fresh basil
black pepper
cayenne pepper
1/4 tablespoon of salt

Put 300 g of chicken breast, 1 onion, 2 bay leaves, 3 cloves of garlic, 1/4 tablespoon of salt and 0,5 l of water in a pot and boil it for 30 minutes. When cooked take breasts out of water and tear it apart.

Dice 1 red paprika. Slice 3 scallions and 100 g of cherry tomatoes. Mix together 150 g of boiled corn, 100 g of boiled peas, 200 g of boiled beans and one diced red paprika. Combine 150 g of cottage cheese, 150 g of yogurt, 3 tablespoons of mayonnaise, chopped fresh basil, a pinch of black pepper, a pinch of cayenne pepper and 1/4 tablespoon of salt in a bowl and mix it.

Put few leaves of lettuce on each tortilla and pour 2 tablespoons of yogurt sauce over it, on that put 3 tablespoons of chicken breasts, 2 tablespoons of mixed corn, beans, peas and paprika, a few slices of cherry tomatoes and scallions.

Put some half-fat cheese on top and wrap it. Put it in a preheated oven on 220°C for 5- 7 minutes.

Epic home made Springtime tortillas! I don't think they could have been more action packed with veggies and spices and chicken ! Not to mention the cottage cheese additive. I don;t know what's up lately, but we've had 3 cottage cheese entries in 3 weeks after having pretty much none ever!
