Steemit Culinary Challenge #37 - Healthy Little Golden Fritters for Little Fingers

Healthy Yet Tempting Food for Children - Although I don’t have any children of my own yet, I was once a kid too (LOL). When I was little, I remember loving finger food. In particular, I enjoyed picking out little & tiny food items and played with them (Not sure the adults were happy about that!). I also loved colourful food as well as any dishes I got to help prepare.

For this week’s culinary challenge, I have decided to make a vegan dish using corn. Even as an adult, I love picking out the corn and put them into my mouth individually. Thought kids might like this one. This is not my recipe, but I forget where I got it from.

It is very easy to make and moms won’t need to labour for hours in the kitchen. Time is precious, why not spend more time with your precious kids! You could even get your kids help mixing the ingredients together. How fun!

I like to serve them with vegetables of different colours. Tonight, I have purple beets, green beans, red tomatoes and green cucumber.

Ingredients:
4 Zucchini (shredded), 1 1/2 cups Corn, 6 Green Onions (chopped), 3 Garlic Cloves (minced), 1 1/4 cup Chickpea Flour, 2 Eggs, 2 tsp Cumin, 1 tsp Oregano, 1 tsp Thyme, 1 tsp Salt, Pepper, Water if required

Methods:
Combine zucchini, corn, green onions, chickpea flour, eggs, cumin, oregano, thyme, salt & pepper. Add water if required. Use a 1/4 measuring cup, scoop the mixture into the pan and fry for 4 minutes on each side.

Thanks @woman-onth-wing for hosting as well as the opportunity for us to participate. This is my very first Steemit Culinary Challenge entry and I had fun!

This looks awesome @steemit-foodie! I have a zucchini fritter recipe that I use all the time. And I absolutely love this recipe and the combination of spices and chickpea flour that you used. Looks like a flavourful healthy meal :)

Thanks so much. I was surprised how chickpea flour works so well in this recipe. And, I am starting to use it a lot. In fact, I plan to make this mini veggie cupcakes this weekend. How about I tag you on it in my upcoming post and we can chat more and exchange ideas! Love chatting about food with like-minded folks like you @natashahall - Thanks again for dropping by. Much appreciated.

Oh they look lovely @steemit-foodie... a very nice first entry for the SCC! I love that photo of them all stacked up, they're so appealing with their texture and colours, it makes me want to reach out and take one! I'm sure these would temp any child who likes corn, and with the cumin those flavours work beautifully together. Good luck!

That's lovely to hear @steemit-foodie, and I know it's not just me who enjoys seeing new people bringing their creations to the table! I'm delighted your motivation was fun and community... mine too! And if we can spread a little knowledge about food for good health in the process then that's a wonderful bonus :-) Hope to see you enter again in the next or future rounds! You're welcome anytime of course :-)

Really creative and colorful way to include more veggies in your kids diet! Great job @steemit-foodie! :)

Thanks dear. corn zucchini fritter was so fun and easy to make. Yes, we gotta start our kids early to help our next generation to like veggies - I look at it as part of our responsibilities, lol.

I'm not a kid, but I would have eaten your meal with pleasure

Haha - we finished all the fritters at home (two adults), lol
