I think the easiest ones to start with are the wild chives, borage flowers, spearmint, lemon balm, elephant garlic leaves, and dandelion flowers. The woodsorrel and narrowleaf plantain are hard to mistake for something else, too. Or the cleavers - you may know them as stick-tights, because they stick to your clothes.
