Steemit Iron Chef 2018 Act 01 Round 02 : Vegetable Noodles or Pancit Canton

Hello Lovely Steemians:

It is my first time to join "*the steemit-ironchef competition", and today i would like to share my noodle recipe with the wonderful cabbage, carrot peas and capsicum.

Cabbage - is delicious, it may not be popular to some dishes but it has a mild taste, versatile and easy to cook. you can add it soup or just simply saute it and or make it a salad.

This is a Vegetable noodle

In the Philippines, we called it Pancit canton. There are lots of variations to cook noodles, but this way works best for me.

Ingredients:

cabbage (as much as you want, chopped in small strips)
red capsicum
snow peas
carrots, julliene
oyster sauce (3 tbspn)
soy sauce (1 tbspn)
noodle (250 gm)
water (1 - 2 cups)

Preparations:

  • Blanch or boil the vegetables for 5 minutes

  • Saute garlic and onion

  • Add in the blanched/boiled vegetable, and saute it for few minutes

  • Add in the water (I used rice water or the first rinse for added flavor).

  • Add in the oyster sauce and the soy sauce. let it stand for few minutes.

  • Add the noodles

  • Let it boil and simmer until the noodles are thoroughly cook, about 10 - 15 minutes

  • Add a dash of salt and pepper according to your taste

and voila, a delicious noodles.

This dish has a sweet to a bit salty taste. In the Philippines, there is always a noodles (Pancit) in every celebration. It is part of our culture and it symbolize long life due to the long strands. It is already a main meal, They usually add meat or shrimp on it but i just opt to vegetable only. The oyster sauce made it mildly sweeter in taste and the soy sauce made a bit salty.

You can also add a little lemon or lime juice to your noodle to for an added zingy taste, and to balance the flavor.
In the Philippines, a lime or lemon to a noodle is a must, It just simply not complete without a lemon/lime, perhaps to counter act the sweet/salty flavor.

Thank you for your delicious recipe and beautiful entry! I liked that you explained a lot of the background of this recipe. These are very interesting and useful informations. Can I replace the oyster sauce to make it fully vegan? What would you suggest?

Yes, you can delete the oyster sauce and just put the soy sauce. The taste doesn't make much difference it still almost the same. I have just put oyster sauce for added flavor because oyster sauce is sweeter than soy sauce.

☺️ 😘 Thank you for the advice. Maybe some sort of sirup, like date sirup (we have on stock always) or agave would give the sweet touch.
