STEEMIT IRON CHEF 2018 Act 02 Round 09 ~ Chia Seed-Jogurt-Mousse with fresh fruits ๐Ÿ‘๐Ÿ๐Ÿ‡

Hello my friends! Long time no see - or at least this is how it feels like to me. I haven't participated in the last round. I spent a wonderful week with my family on a dutch island and I didn't find a moment to create a tiny sandwich for the last contest though we cooked a lot together and enjoyed delicious foods. My nieces did an amazing job with rolling beautiful sushi and rice paper summer rolls with me for my birthday. My parents brought a spiralizer as a present so we made zucchini noodles with a vegan bolognese sauce and we made a table full of antipasti and tapas for another late night dinner.

But now I am back and here is my entry for a deconstructed fruit salad for #steemit-ironchef. I thought this would be an easy topic but then I had a hard time getting a nice idea for it. Finally I decided to keep it simple and just arrange different local and seasonal fruits and berries on a plate together with a plantbased yogurt-chia-seed-mousse.

Ingredients:

  • a pear
  • some cute tiny peachesย 
  • blueberries
  • raspberries
  • blackberries
  • red currants
  • some blackberry-orange-currant-jelly my mom made last summer
  • fresh basil leaves and chia seeds for decoration

for the jogurt-chia-mousse:

  • ย some lupine based jogurt
  • fresh lemon juiceย 
  • chia seeds
  • fresh basil leaves
  • some ground vanillaย 
  • some pear sirup

Preparation of the mousse:

I shredded three teaspoons of the chia seeds, juiced one lemon, cut the basil leaves in small stripes and mixed everything together with a little bit of the sirup, the ground vanilla and two tablespoons of chia seeds in whole under two cups of the lupine jogurt. I let it sit in the fridge for a few hours and added a little bit more of the chia seeds because it was still too runny. Try and decide when it has the perfect texture. The taste was slightly sour and fresh and not very sweet. If you like it sweeter add more of the sirup. I think it's unnecessary because the fruits add more sweetness to the plate.

I removed the pears core and the stem and gave the half of the pear a nice cut and arranged it with the other fruits and the mousse on a plate. I put some of the jelly made by ny mom into the halved peaches. This was a very enjoyable idea and so delicious! ๐Ÿ˜‹

All the beautiful fruits brought the sun on my kitchen table. It was the perfect theme for this week because it's so hot outside - the only things you think of to eat are fruits and salads anyway... โ˜€๏ธ๐Ÿ˜…โ˜€๏ธ
